Detox January (and a sauteed fish recipe)

Time for a quiz...

Over the holidays and/or the past few months, did you
  • Eat too much?
  • Drink too much?
  • Let your exercise regime slide?
  • Justify your muffin top with "these things happen when you get older"?

If you answered yes to most of those (especially the last one) I invite you to join us in a little somethin-somethin we call Detox January.

We started doing this a few years ago, as a break from the overindulgence of the holidays and to get the new year off to a good start. It's not some overly ambitious resolution that you know you won't be able to keep (new gym membership, anyone?); it's more like a short-term, mini resolution that you know you can achieve.

And who doesn't love a little success?

The rules are simple. For the entire month of January:
  • Abstain from all alcohol (if a recipe calls for some, that's OK)
  • Eat a bit healthier every day (we don't crazy here, just try to eat more veggies than cookies and keep our recipes more Cooking Light than Julia Child)
  • Exercise more than you did in December

Sauteed fish filets with spinach and oven-roasted tomatoes (a Ninja original)

Ingredients
1 pound firm white fish filets (cod, halibut, snapper)
olive oil
salt and pepper
1 pint grape tomatoes (the bigger, the better)
2 cloves minced garlic
1/4 cup white wine
3-4 cups baby spinach

Directions
Preheat oven to 375 degrees.

Slice tomatoes lengthwise and place in a medium-sized bowl. Add about 1 tablespoon olive oil and garlic; toss gently to coat. Spread tomatoes, cut side up, on a baking sheet. Roast in the oven for about 30-40 minutes (be careful not to burn them). Set aside.

In a large skillet, heat an additional 1 tablespoon oil over medium-high heat. Season fish filets with salt and pepper. Add to pan and cook approximately 2-4 minutes per side, depending on thickness (rough rule of thumb is 6-8 minutes/side for each inch of thickness). Remove from pan and set aside.

Add wine to pan, followed by tomatoes; stir for about 10-20 seconds. Add spinach and stir until just wilted. Divide spinach/tomato mixture and serve with fish.
