Banana cake for the Ninj's first birthday: a recipe

Banana cake ... er ... bread?
Well, happy birthday -- the Ninj is one year old!

Yep, one year and 110 posts later, here we are. And of course we have to celebrate a milestone birthday with cake.

Yay ... CAKE!

Until it turns out to be bread in cake's clothing.

I got this recipe from sasasunakku (love her site and her understanding of hangrrr!) and was really excited: banana CAKE! Apparently an old-school New Zealand favorite! How international the Ninj's first birthday would be!

So I made said cake. And it looked beautiful, thanks to the flowery kugelhupf pan (look at it up there -- wicked!). I even broke out my rarely-if-ever-used snazzy cake stand for the photo shoot. Nice.

Then we ate the "cake."

It's banana bread.

It's very, very good banana bread, mind you, but still banana bread. Just in a cool cake shape.

I'm sure Sasa's chocolate frosting would have made it much more cake-like, but you know how I am: if I frost it, I can't scam and call it "breakfast" as well as "dessert."

Banana Cake from sasanakku

Ingredients
3/4 cup (1 1/2 sticks) butter
1 cup sugar
3 eggs
4 bananas, mashed
1 teaspoon baking soda
3 tablespoons boiling milk (I just heated it in the microwave)
2 teaspoons baking powder
1 2/3 cups flour

Directions
Preheat oven to 300 degrees.

Grease and flour a 8- or 9-inch Bundt or Kugelhopf pan.

Cream butter and sugar in a mixer, then add the eggs, one at a time. Fold in the mashed bananas.

In a small bowl, dissolve the baking soda in the milk and mix into the batter.

In a separate bowl, whisk together the flour and baking powder and mix into the banana mixture.

Pour the batter into the prepared cake pan and bake for about 45 minutes or until a toothpick inserted comes out clean.

Cool in pan until it can be handled, then finish cooling completely on a wire rack.

  1. Happy Birthday Ninja! Yum yum yum--what a great way to celebrate, by giving us cake that you can pretend is bread. And love the pan, that's so lovely.

    Sounds right up my alley--we eat lots of bananas but never quite enough it seems and tend to have lots of oldish ones hanging around.

    so the milk is supposed to be actually boiling, not just scalded?

  2. Sasa's recipe says boiling -- I just put the milk in a little bowl and microwaved it until it bubbled. Once you add the baking soda to it, it quickly turns into something resembling meringue. Kinda neat!
