Slow cooker chicken corn chowder

I'm back with another slow cooker recipe.

Seriously: I've been on a slow cooker tear lately -- largely because I am single-handedly painting the interior of our new house (I know, I'm insane. Or just cheap. Or both). As you would guess, this is more than a bit time-consuming and tiring. By the time I finish up for the day, the last thing I want to think about is making dinner.

And you know how I feel about take out. Well, I might consider it if there was any place other than Domino's in my new 'hood that delivered to a house beyond walking distance from the local university... but there's not.

So I've been focusing on making the easiest weeknight dinners possible. Which is why I'm working my slow cooker overtime. Especially with no-prep-required slow cooker recipes, like this skinny chicken corn chowder.

One of my favorite things about this recipe is the shortcut use of pico de gallo (sometimes called "fresh salsa", I've noticed) to add just the right amount of heat and spice. A total time-saver!

Additionally, unlike many other chicken corn chowder recipes that get their creamy thickness from rich cream, this yummy chowder uses skim milk and is loaded with veggies, placing it firmly in the healthy and skinny dinner camp.

I almost wish the weather would turn colder, as this slow cooker chicken corn chowder is really warming comfort food.

Wait: Did I just say I wanted it to get COLDER?

Slow Cooker Chicken Corn Chowder

This easy, skinny chicken corn chowder is also gluten-free.

Ingredients:
1 lb. boneless skinless chicken breasts
4 cups chicken stock
3 cups corn kernels (canned or frozen and thawed)
1 1/2 cups pico de gallo (sometimes labeled "fresh salsa")
3/4 cup chopped tomatoes
1 small carrot, chopped
1 clove garlic, chopped
2 teaspoons fresh thyme leaves (or 1/2 teaspoon dried)
1/2 teaspoon dried summer savory
3/4 teaspoon salt
1/2 teaspoon pepper
1 cup skim milk
2 tablespoons cornstarch
Sliced green onion, for garnishing

Directions:
Combine all the ingredients EXCEPT the milk and cornstarch in the crock of a slow cooker. Cover and cook on LOW 7-8 hours. When ready to serve, turn the cooker to HIGH for 10 minutes, then whisk together the milk and cornstarch in a small bowl and add it to the chowder, stirring for another few minutes until slightly thickened (the stirring will also shred the chicken). Salt to taste.
