A super-simple recipe for Nutella peanut butter chip mini muffins: I almost feel that I don't need to post anything else other than those words to get you to try this recipe, right?

I have posted before about how I get snack cravings -- like many of you, I'm sure -- in the late afternoon. Since we eat very little processed food around Casa de Ninj, this means that if I want a treat, I have to make it.

This is good in many ways because, if I'm feeling lazy, I just go without said treat. Which is better for my waistline.

However, there are times when the siren call of Nutella is just too great.

(And yes, I realize that Nutella counts as a processed food. Which is why I often make my own Nutella, but I don't expect you to go to those extremes. It's totally fine by me if you have a big ol' jar of Nutella in your pantry at all times. I'm not judgy like that.)

I adapted a ridiculously easy, three-ingredient recipe from Bitchin' Kitchen (if you're not familiar with Nadia G and the BK crew, you must check them out now) for my muffin recipe. The awesome thing about the recipe is that it yields a boatload of bite-sized treats, so you can freeze some for later and pull them out of the freezer whenever you crave a little Nutella-y sweetness. And if you don't like peanut butter chips, substitute chocolate chips or just leave them out entirely.

And, of course, the recipe is super-easy. 'Cause you know that's how The Ninj rolls.

Easy Nutella Mini Muffins

(slightly adapted from Bitchin' Kitchen)
As written, this recipe yields about 30 mini muffins -- feel free to half it if that's more than you want.


Ingredients:
2 eggs
1 cup Nutella
1/2 cup plus 2 tablespoons whole wheat flour
1/3 cup peanut butter chips

Directions:
Preheat oven to 350 degrees.

In a bowl, lightly beat the eggs and mix in the Nutella and flour until just combined; fold in the peanut butter chips. Spoon into prepared mini muffin pans (feel free to use mini liners, if you like) and bake for about 15-20 minutes. Cool on a wire rack.

  1. Nutella calls out to me from my cupboards too. You just have to listen and obey the call to bake :-) These little mini muffins are telling me I need them in my life very soon!!!

  3. Made these yesterday with mini chocolate chips (yes because more chocolate is always better).
    Happy to report these are Mega Delish and got rave reviews from the kiddos!
