I read somewhere once, a long time ago, that having a little something sweet after a meal is a good thing because it sends a signal to your body that it's time to stop eating, the meal is over.

Doesn't that sound credible?

Honestly, I don't know if it's true, but it works for me.  Because I generally do find that just a taste of a little something sweet makes a meal complete.

Now, I'm not advocating that you eat an entire cheesecake just to send your brain a message. Note that I said a little something sweet.

OK. Labor Day was yesterday so now I can be excited about fall and back-to-school time!

(Although I refuse yet to be excited about pumpkin. Plums and apples haven't even had their chance to shine yet, people. Let's save all the pumpkin hooha for October, shall we?)

Anyway, back to back to school. I'm not going back to school nor are my dogs (although they could probably use it), but I'm excited regardless. And the reason I'm excited is this super easy, five-minute healthy chocolate pudding.

Yes, pudding. Why do pudding cups excited me? Because I pack lunches. Healthy lunches. And who could possibly say no to a healthy chocolate pudding cup in his lunch bag?

Not Mr. Ninj, the recipient of my healthy lunch bags.

Let's be honest. Whether you're 8 or 48, it's pretty sweet to have a little dessert-y type item in your lunch bag to finish off your noontime meal. In fact, it has been proven that eating something sweet at the end of a meal signifies to your brain that you're full and you should stop wanting to eat more food. (It's a true fact because I read it somewhere once. Yep, super scientific, you can quote me on it.)

Heck, I even went out of my way to style the photos of my five-minute healthy chocolate pudding in such a way that the lunch-bag-packing intention was entirely obvious.

Heads up, peeps: This is not really one of my usual healthy recipes. But, as a firm believer in moderation rather than denial, I'm sharing it anyway.

Because cookies.

Wicked. Awesome. Cookies. With a story.

Some of you may know that I am an alumna of Mount Holyoke College in Western Massachusetts. As a nearly 200-year-old college for women, my alma mater has quite a few traditions that we alumnae hold dear.

Apparently the Chef Jeff cookie is one of them.

I say "apparently" because these cookies didn't exist during my tenure at Mount Holyoke. When I was an undergrad, we were fortunate enough to not have to endure typical university-style centralized dining. No, my friends, we took each of our meals in the common dining room of our residence halls, eating and socializing like a family. Dining regularly with those with whom you lived built an indescribable sense of community, the reaches of which I still feel on a daily basis, no matter how far away from the campus I move.

Alas, due to some questionable decisions on the part of administrators and trustees over the years since I graduated, that community dining experience has become a thing of the past. While it breaks my heart to see current students waiting in line in the campus center for burgers and pizza instead of sitting in a communal dining room, sharing dorm-home-cooked meals family style, I have found small consolation in the one bright spot born of this campus center dining experience:

I know, right? It's a crazy combo. I love those fiery little wasabi peas: totally addictive little snack crack. And it's like a game every time you put them in your mouth, because you never know which one is going to be extra fiery and shoot that quick flash of heat right up your nose and into your brain. BAM!

So it stands to reason that, as much as I looooooove combining salty and sweet tidbits together, wasabi peas would be the perfect addition to chocolate bark.

And GUESS WHAT? They are!

I told you last week, in the context of my spicy Korean beef bowl, how I've become a big fan of quinoa over the past few years. One of the things I love about it is that, like many other grains, it's quite versatile; you can use it equally successfully in sweet baked goods as you can in savory suppers.

In fact, quinoa flour (basically just pulverized uncooked quinoa grains) is the key to making these chocolate peanut butter blondies gluten-free. Even if you don't need to eat gluten-free, these blondies are still your friend: all of our daily diets could use the extra protein and fiber that quinoa offers.

And how freakin' awesome is it that you can get it in a chocolate peanut butter blondie?

Behold: Rich, dark chocolate brownie bites, finished with crunchy sea salt -- but also loaded with beets, as well as naturally sweetened (zero refined sugar, thanks to sweet dried dates) and gluten-free.

Too good to be true? Nah -- just another stealthy way The Ninj has discovered to get Mr. Ninj to eat his vegetables ... because he's my equivalent of your picky 5-year-old eater, but worse, since I can't threaten to take away his screen time or anything.

Beets. What a seriously misunderstood vegetable! They don't have to be relegated to the roasting pan or pickling jar. They're perfect for baking, too. Beets come in beautiful colors, are naturally sweet and are the key ingredient that makes real red velvet cake red.

You know, if you like cake. (insert snort laugh)

Chocolate and goat cheese pastries {+ a giveaway}

We regularly -- and without question -- pair cheese with wine, right? Similarly, we know how good a glass of red wine and some dark chocolate can taste.

So why is it that we don't often think of pairing cheese and chocolate together?

Clearly we've been missing the boat. In a big way.

In honor of Valentine's Day (which, frankly, is not a big deal around Casa de Ninj) and, perhaps more importantly, the end of Detox January (which I vow will not simply become Retox February), I've created a little treat -- dark chocolate and goat cheese pastries -- that you can enjoy for breakfast, with afternoon tea or as a light dessert.

Or, if you're Mr. Ninj, all three.

Regular readers know I'm a big fan of sweet and savory combinations, like my salted cardamom oatmeal cookies or the holiday favorite bourbon-salted peanut butter chocolate truffles. So when my friends at Vermont Creamery and Lake Champlain Chocolates suggested pairing chocolate and cheese for Valentine's Day, my interest was a little more than piqued.

At first I was a little stumped as to how best to mix the creamy, savory goat cheese with the richer, sweeter chocolate -- other than just snarfing them down separately, of course. I tried to think classier. Which made me realize that both since both cheese and chocolate get melty and even more awesome when warm, why not tuck all that awesomeness inside a pastry?

Booyah.

As with many of my recipes, this one is easy peasy, even though it makes quite an elegant impression. The pastry puffs up like you wouldn't believe, and while the goat cheese and rich chocolate does indeed, as I had hoped, get all melty and awesome in the center, there's not so much of it as to overwhelm the whole pastry effect. It's very less-is-more.

Sometimes you just need a cookie. Am I right? Can I get an amen?

But -- SIGH -- it is still Detox January, so I'm resisting the urge to go mental and make Moonpie cookies or something. I'm trying to keep my healthy-ish hat on.

Behold: double chocolate peanut butter chip cookies -- which just so happen to be gluten-free, dairy-free and added-refined-sugar-free.

Booyah!

I don't need to eat gluten-free, thank goodness, but I've been finding that I enjoy many of the substitutes that make recipes gluten-free. For instance, this recipe uses almond meal (read: pulverized almonds) instead of traditional flour. I love me some nuttiness and I certainly don't care about the flour, as long as the cookie tastes great.

Which is does. Dark cocoa powder gets a double chocolately boost from bittersweet chocolate chips, both of which are made more completely awesome by the peanut butter chips. And the whole thing is goes to 11 with the addition of crunchy salt: given that the cookies don't really spread and change their consistency as flour-and-butter-based cookies do, the salt stays crystallized. Which means you can really taste it -- and it crunches! (You know how The Ninj feels about salted cookies, right? ERMERGAHD. Tip: If you, too, are a salted cookie junkie, use Maldon sea salt flakes in place of the kosher salt for even more crunch.)

Moonpie cookies

Moonpies. Oh boy oh boy, peeps: Moonpies, together with Little Debbie Oatmeal Creme Pies (like a second cousin once removed), are one of the things I really, really miss about having given up highly processed snacks.

I know, some of you might think the fake-ish waxy chocolate coating is nasty, but I looooooved those little snack cakes. They're like little packaged s'mores you can eat whenever you want.

They're on my list, along with Cool Ranch Doritos, of Processed Foods I Will Eat with Abandon If I'm Told the World Is Ending in 24 Hours.

In case you have lived under a rock (or at least never in the Southeast) for your entire life and don't know what a Moonpie is (so sad!), I'll give you a little background. Moonpies are graham cookies with a marshmallow Fluff filling, dipped entirely in chocolate. According to the company web site, they were created in 1917 when a Kentucky coal miner asked the Chattanooga-based bakery's traveling snack salesman for a "snack as big as the moon" that was also portable (for the lunch pail) and filling. Hence, the Moonpie. 

Lately I've been seeing all sorts of copycat Oatmeal Creme Pie recipes around Pinterest, so I decided it was time to give the Moonpie its similar due. But rather than make decadent sandwich snacks dipped in chocolate, I deconstructed them into cookies.

So, remember last week's bourbon salt? Did you make some over the weekend? I sure hope so, because you are going to want to break it out and use it in today's recipe: bourbon salted dark chocolate peanut butter truffles.

Ermergahd, peeps: These are like peanut butter cups that have gone to eleven.

Talk about an amazing holiday dessert treat. Got a party coming up? Bring these truffles: I guarantee they will be the hit of the dessert table and you'll be asked at which bakery you scored them. (Although some friends these are, if they don't already know you're an amazing ninja-like cook and would never show up at a party with store-bought dessert.)

Now, let's be clear: I am not claiming these bourbon salted peanut butter truffles are one of my normally healthy-ish recipes. They're not. There's a whole lotta sugar, salt and chocolate in here. But it's the holidays, and we all deserve some decadent treats at holiday time (which we make up for during Detox January, remember?).

Yet while these are not the healthiest recipe I've ever made, they certainly meet my other recipe criterion of being easy. Yes, elegant, delicious and decadent yet also easy-peasy. How cool is that?

Peanut butter chocolate chip cookies (gluten-free)

I think these peanut butter chocolate chip cookies are my new go-to cookie recipe. Mr. Ninj says they taste like a smooshed, baked peanut butter cup.

Awwwwwwwww yeah.

I firmly believe that everyone needs a quick and easy, go-to cookie recipe, whether for whipping up a late-day treat for yourself or baking some last-minute goodies for the school party your kid forgot to mention until the night before -- and every other situation in between.

The key is that the cookies have to be wicked good but also wicked easy. These peanut butter chocolate chip cookies are both (I mean, come on: "smooshed, baked peanut butter cup" -- you know it's gonna be good).

I can't tell you how many times I have already made this recipe over the past few months. It's a cray cray number and yet we're still not sick of them. Now that's a good cookie!

Oh yeah, and did I mention they're gluten-free? And not in a substitute-gluten-free-flour-for-regular-flour way -- they are truly grain-free, so you don't even have to worry about the recipient's gluten sensitivity if you gift them to someone.

We've been talking about vegetables so much lately that I thought I'd give you a break.

I may be a tireless advocate for healthy eating, but I'm no saint. Regular readers can attest to the fact that my recipe index is peppered with a fair amount of sweet or salty treats; Mr. Ninj can attest to the fact that I tend to make batches of cookies in the late afternoon almost every weekend (hello, late-day cravings).

Chocolate barks like this one are an ideal way to keep treats on hand without overindulging. When I make a tray of this chocolate granola bark, I break it into smallish pieces and store them in the freezer. If I need want a little treat -- say, in place of a full dessert or late in the day when dinner is still a few hours away (there's that late-day craving again!) -- I dip into the bag of bark and just eat one small piece.

One small piece is all it takes, too, because the bark made with dark chocolate, which is a great way of satisfying a sweet craving without going overboard. And, of course, we've all heard that a little dark chocolate in your diet is actually good for you, the same way a glass of red wine is good for your heart. And, just as you wouldn't drink a case of red wine in one sitting just because a little is good for you, you won't eat the whole tray of bark either: it's too rich and, frankly, that would just be ugly-ass gluttony, now wouldn't it?

OMG, y'all: The Mason jar blender smoothie is not an urban myth! I still cannot quite believe that something crafty I saw on Pinterest actually worked.

This is a smoothie game-changer for me.

I love smoothies as much as the next person. I really do. Heck, I've got a bunch of smoothie recipes on this site. But I hate hate HATE to clean the blender. Did I say hate? I mean REALLY hate. Hand-washing is not my thing, so I don't make smoothies nearly as much as I'd like.

I know, it's sadly, pathetically lazy but hey, we've all got our issues, right?

Enter the Mason jar blender smoothie. (Again, I'm still reeling that this is not a lie.)

If you separate the blade attachment thingy from the pitcher portion of your blender, you can screw the blade attachment thingy right onto a Mason jar! And then, after you whirl it up, you can drink it directly from the jar! Not even an extra glass to wash! ERMERGAHD: Lazy person's dream!

A super-simple recipe for Nutella peanut butter chip mini muffins: I almost feel that I don't need to post anything else other than those words to get you to try this recipe, right?

I have posted before about how I get snack cravings -- like many of you, I'm sure -- in the late afternoon. Since we eat very little processed food around Casa de Ninj, this means that if I want a treat, I have to make it.

This is good in many ways because, if I'm feeling lazy, I just go without said treat. Which is better for my waistline.

However, there are times when the siren call of Nutella is just too great.

(And yes, I realize that Nutella counts as a processed food. Which is why I often make my own Nutella, but I don't expect you to go to those extremes. It's totally fine by me if you have a big ol' jar of Nutella in your pantry at all times. I'm not judgy like that.)

Coconut chocolate drops (and a Keurig giveaway)

Today is an exciting day in Ninjaland: to celebrate the first day of spring and, hopefully, the beginning of the end of all this winter snow and cold weather, I'm part of a group of awesome New England bloggers introducing you to a new seasonal coffee flavor from Keurig Green Mountain ... AND giving away a Keurig brewer!

The new coffee flavor, Island Coconut, truly lives up to its name. It's a light-roast coffee (which I prefer) with a great coconutty aroma -- it will definitely have you thinking about tropical islands and warm weather.

It also had me thinking about pairing it with chocolate, which I have done with this recipe for Coconut Chocolate Drops, a ridiculously easy, no-bake dessert. Made with very little sugar, ground oats, unsweetened coconut and cofee, these bite-sized chocolate drops are only slightly sweet and  guilt-free.

Lately, I've been getting a hankering for cookies in the late afternoon. I know, this is the time of day when a better snack choice would be a piece of fruit or some cheese, but sometimes you need to acknowledge your cravings.

Being The Ninj, I don't keep cookies around the house unless I have made them myself. So nine time out of ten, I'll have to bake a batch of cookies if I have a cookie craving at four in the afternoon and want to satisfy it.

Now, the great thing about being a food blogger is that, when I get said craving for cookies and must bake a batch, it's still considered working, not screwing around in the kitchen to satisfy a craving. And when it's work, it gets shared with you.

Really, we all win when I have a cookie craving.

Another part of being The Ninj, as you know, is keeping my recipes on the healthier side -- even the indulgent, four-o'clock-craving-satisfying kind.

I'm not going to tell you that these are healthy chocolate cookies. But I have made the effort to make them a bit lighter and they are awfully rich and chocolatey, so you're not likely to scarf down all of them in one sitting, which helps. Although, if you are a crisp cookie fan, they are pretty darned addictive.

Happy Valentine's Day!

OK, I know it's not really Valentine's Day (heck, we haven't even quite reached the end of Detox January), but you are going to feel like it is a holiday all about love with today's post. Why? Two reasons:

ERMERGAHD. This stuff is like candy -- well, if the candy was coffee-mocha-marsala-flavored. Just as with the traditional tiramisu dessert, the key to this recipe is rich mascarpone cheese, which I love because it's not too sweet. Add to that a great mocha-espresso flavor, accented with sweet marsala wine and you've got all the awesomesauce of tiramisu without any of the hard work.

So remember when I told you last week that Mr. Ninj pronounced my Snack Crack to be his favorite food of all time?

He just changed his mind: now these white chocolate pretzel chip cookies have taken over the number one position.

(Yeah, he's fickle that way when it comes to treats.)

Not that I'm arguing with him, mind you.

We recently got a big container of white chocolate-covered pretzels. I mean a really big container. (Damn you, cute Cub Scout neighbor boy with your sad little fundraising sales pitch.) Now, for some people this might be no big deal. But neither Mr. Ninj nor I has very effective willpower around treats. Scratch that: we have no willpower around treats. Zero. As in, "Well, if one is good, then 25 will be awesome!"

Therefore, I took decisive action. I needed to turn those pretzels into something -- and then proceed to give them away.

As it is the holiday time of the year, the time of cookie swaps and food gifts, I went with cookies.
