Creamy slow cooker pork and vegetables

Creamy slow cooker pork and vegetables: easy weeknight comfort food that will make your whole house smell as good as dinner tastes.

creamy slow cooker pork chops and vegetables recipe

Do you remember that Carly Simon song, "Anticipation"? The one used in the popular Heinz ketchup commercial when I was growing up? The one that evoked the feeling of not being able to wait to taste something? (Although ketchup -- really? I could wait, no problem, really.)

That song will be running through your head all day long as you smell this creamy slow cooker pork and vegetables dinner cooking. I speak from experience.

Slow Cooker Comfort Food

And it wasn't just me. The first time I made this slow cooker recipe, a pair of HVAC guys were working upstairs in our house, installing a new air conditioning system. At the end of the day, one of the guys said to me, "Well, we have a little problem."

I begin freaking out. You know, because I'm always so calm when problems arise (snort). "What's wrong?"

He replied, "We really don't mind working hard all day. But you made it really, really hard today since you've made us smell something that delicious all day long!"

Easy slow cooker jambalaya

Enjoy this easy jambalaya, delivering all the spicy Creole flavor you love but made effortlessly in your slow cooker.

Easiest slow cooker jambalaya from YankeeKitchenNinja.com

Did I ever tell you that I lived in New Orleans for a while? (Yeah, like you're surprised anymore by the number of places The Ninj has lived...)

Let's just say it was a nice place to visit. :-)

But the food. Oh my gosh, the food. It's the only place I've ever lived where I gained more than 10 pounds really, really quickly. Because the food. Oh my gosh, the food.

In fact, I had never even eaten jambalaya until I lived in New Orleans. And I certainly had no idea the awesomeness that I was missing! Jambalaya is now one of my all-time favorite comfort foods -- and not just because of the smoked sausage.

Yet, as with long-cooking rice dishes like risotto, I never really made jambalaya a lot at home because it was too time-consuming.

Not so anymore, thanks to the slow cooker.

Tangy slow cooker pot roast sliders

Update your Sunday pot roast with this tangy riff, made in the slow cooker and turned into sliders for an easy weeknight meal with leftovers.

Tangy slow cooker pot roast sliders

Pulled pork is one of my all-time favorite things to make in the slow cooker. And I think you're well aware of my penchant for transforming chicken into all sorts of awesome dishes in my crockpot. I don't know why I never really thought to do any kind of beef cut in the slow cooker. So when I saw this article in the New York Times about a slow cooker beef roast with some interesting spicy flavors, I knew I had to give it a shot.

Apparently, there's a version of this beef that went viral via Pinterest (called "Mississippi Roast", for some reason) -- but it calls for packaged dressing AND gravy mix. Ugh. No way -- you know that's not how The Ninj rolls. Especially when it's just as easy and no less time-consuming to use real ingredients.

Which is what's happened here.

Slow cooker chicken corn chowder

This healthy chicken corn chowder is made effortlessly in the slow cooker -- an easy and satisfying weeknight comfort food dinner.

skinny slow cooker chicken corn chowder

I'm back with another slow cooker recipe.

Seriously: I've been on a slow cooker tear lately -- largely because I am single-handedly painting the interior of our new house (I know, I'm insane. Or just cheap. Or both). As you would guess, this is more than a bit time-consuming and tiring. By the time I finish up for the day, the last thing I want to think about is making dinner.

And you know how I feel about take out. Well, I might consider it if there was any place other than Domino's in my new 'hood that delivered to a house beyond walking distance from the local university... but there's not.

So I've been focusing on making the easiest weeknight dinners possible. Which is why I'm working my slow cooker overtime. Especially with no-prep-required slow cooker recipes, like this skinny chicken corn chowder.

Healthy slow cooker cashew chicken tacos

Whip up these easy, healthy cashew chicken tacos in the slow cooker as a weeknight dinner or a crowd-pleasing party appetizer.

Slow cooker cashew chicken tacos: healthy, easy, gluten-free

I know: another slow cooker recipe. But really, can you blame me? They're so good and so freakin' easy -- it almost feels like having someone make dinner for me for a change.

Almost.

And this slow cooker cashew chicken taco recipe is no exception to the so-good-so-easy theme. Simply blend up a five-ingredient sauce, pour it over chicken in the slow cooker and -- SHAZAM -- a few hours later, you've got tacos!

It's a pretty perfect healthy and easy weeknight dinner recipe. Plus, if you use corn tortillas instead of flour ones, it's a gluten-free dinner recipe, too.

Easiest slow cooker chicken tikka masala

You're going to love this healthy recipe for making amazing chicken tikka masala effortlessly in your slow cooker.

Easy, healthy recipe for chicken tikka masala made effortlessly in a slow cooker

Regular readers know I'm more than a little obsessed with slow cooker meals -- heck, with making anything in my slow cooker. And not simply the usual soup or chili but also the unexpected: oatmeal, cake, bread pudding -- nothing is off limits.

It's largely because I am all about recipes that are not only healthy and delicious but also easy or even downright effortless.

Which is why it drives me absolutely bananas when I see slow cooker recipes that require pre-crock stovetop preparation. What is up with that? The whole point of the slow cooker, for me, is to make meal prep easier, not add extra steps.

I just don't get it. Why put the effort back into something effortless?

Slow cooker sweet potato and cheddar soup

Effortless low cooker sweet potato and cheddar soup: easy, healthy and with just a bit of kick from smoky chipotle peppers. Effortless fall comfort food!

Easy and healthy slow cooker sweet potato and cheddar soup

As we near the end of October, I'm happy to say that I still haven't made or eaten anything with pumpkin in it -- AND I HAVE SURVIVED! Seriously, I'm not a pumpkin hater. Not at all. You'll find lots of pumpkin recipes here on the blog. But this year, pumpkin-spice everything has made me feel like taking a pumpkin holiday and focusing on enjoying the other fruits and veggies of fall.

Which is how I got hooked on this slow cooker sweet potato and cheddar soup. It's got a couple of canned chipotle peppers in adobo sauce cooked into it, which gives the soup just the right amount of smoky spiciness.

It's like taking all the best flavors and smells of fall and immersion blending them into a warming, comforting bowl of soup.

Makes me want to snuggle in front of a fire with a cozy chenille throw.

Which I could do if it would stop being 78 degrees outside every damned day! Jeez louise, enough already with the summertime: I am so ready for fall.

Crockpot chicken tamale pie with cornbread crust

This healthy crockpot chicken tamale pie cooks low and slow during the day and is finished with a spicy, crunchy cornmeal crust.

crockpot chicken tamale pie with cornbread crust

Fall is one of my favorite times of the year. As much as I love summer, especially for its t-shirt and flip flops easy-peasy dress code, I'm always excited when fall arrives. Cooler temperatures, snuggly sweaters, crisp autumn leaves -- I love it.

Fall is also a great time for slow cooker recipes. A good slow cooker recipe can make the whole house smell like home-cooked goodness, without your needing to lift much more than a finger.

While this crockpot chicken tamale pie with cornbread crust is technically finished off in the oven, it's still a hugely easy recipe, perfect for weeknight dinners or for when you have a house full of guests to feed and you actually want to spend time with them instead of locked away in the kitchen.

We normally think of tamale pie as being made with fattier pork cuts; to keep this dish on the healthier side, I've used boneless skinless chicken breasts.

The flavors are bold and just a little spicy, so it's totally kid-friendly. But if you're more adventurous, feel free to add the other half of that jalapeño in the ingredient list to the sauce.

Sweet and spicy slow cooker pork bowls

Sweet and spicy slow cooker pulled pork, combined with quinoa and fresh veggies, is a no-effort, tasty weeknight dinner that's also gluten-free.

sweet and spicy slow cooker pork bowls -- easy and gluten free

I think this is going to be one of my favorite posts ever. And not only because these sweet and spicy slow cooker pork bowls are just about the best thing I have ever eaten. (Truth.)

Let me tell you why.

Regular readers are aware that I am a fur mom to a couple of nutso dogs. I consider them my babies (and, OMG, when did I become that crazy pet lady??!!). But apparently sometimes I think of them as too human and forget that they are really just food-crazed wildebeests who only occasionally listen and do what they're asked.

By now, you're probably asking yourself, what the heck does this have to do with slow cooker pulled pork?

As a food blogger, I'm always trying to get the perfect hero shot when I photograph my recipes. This photo shoot was no exception. Since I don't have a swanky expensive tripod with a crane arm like many of my blogging compadres, if I want to get a good overhead shot of a recipe, I often have to photograph my recipes on the floor.

Read that again: On. The. Floor.

I bet you can see where this is headed.

Slow cooker chicken pho

Easy spicy and aromatic chicken pho, made simply and effortlessly (and gluten-free) in the slow cooker.

Easy crockpot chicken pho noodle soup

Guess what? We're moving again! Don't panic -- this is merely a cross-town move, not another relocation (OMG, even mentioning the word "relocation" makes me break out in a sweat.)

Just moving across town should be easy, right? No packing bags of rice in 14 pounds of packing paper to protect it as it crosses state lines, right?

Well, yes and no. Yes in that things can be packed more haphazardly and quickly. No in that I AM THE PACKER AND MOVER -- and yes, I'm screaming.

(I'm also doing my most epic I-told-you-so dance for Mr. Ninj, who basically accused me of being a hoarder when I decided to save all the boxes and packing paper from our move last August. HA!)

I'm telling you all of this because you will see the influence of the added packing and moving workload in my posts over the next few weeks: Get ready for lots of quick-and-easy dishes and treats! Starting today, with this slow cooker chicken pho.

The slow cooker is going to be my new BFF during this transition, I can tell.

Slow cooker cauliflower cashew soup

Rich, creamy slow cooker cauliflower cashew soup is full of healthy ingredients and easy to prepare. Vegan, paleo and gluten-free.

slow cooker cauliflower cashew soup

"Let's move back to the South!" Mr. Ninj said last year. "The winters will be much milder than they are in Vermont," he said.

Pfffft.

Somebody's pants are completely on fire, since I'm looking out the window at 10 inches of freshly fallen snow.

Which can only mean one thing: time to break out the slow cooker.

I'm excited about this slow cooker cauliflower and cashew soup because ... well ... the name kind of gives it away. It's a cauliflower soup (so yay for a meatless meal) with an extremely creamy, nutty flavor, thanks to both the cashews in the name and the almond milk that's not in the name.

Slow cooker soy and citrus chicken

Sweet and tangy slow cooker soy and citrus chicken, flavored with warm spices, soy, ginger and orange: a simple, healthy, one-pot meal.

slow cooker soy and citrus chicken

What is it about cold weather that turns me into a slow cooker junkie?

I swear, it's a good thing I own more than one slow cooker because when the weather turns chilly, I've been know to have them cooking round the clock: I start one with overnight oatmeal for breakfast before I go to sleep and then immediately fire up another as soon I get up with a batch of chicken stew or butternut chili.

I also like my slow cooker for busy weeknight meals. What a treat to have a whole meal ready to go, nearly effortlessly, at the end of a long day.

If that's the way you use your slow cooker, too, you're going to be completely jazzed about this slow cooker soy and citrus chicken. This sweet and tangy chicken takes only a few minutes of prep and is so flavorful you only need to serve it on a bed of fresh greens for a healthy, delicious, one-pot meal.

Slow cooker chicken and white bean soup

This easy, slow cooker chicken and white bean soup is loaded with two types of protein, fresh herbs and healthy veggies: a perfect warming weeknight dinner.

easy slow cooker chicken and white bean soup

How has the weather been in your area lately? Cold? Snowy? If so, I bet you've been thinking a lot about soup, chili and other warming winter dinners.

I know I have.

But no wussy soups for me this time of year. Nosirreebob. The Ninj craves a hearty, filling soup, with protein and veggies, that makes a whole meal in and of itself.

(Largely this is because I'm lazy and don't want to have to make a salad to go with my soup, but let's just keep that between us, mmmmkay?)

Speaking of lazy, I'm a huge fan of soups made in the slow cooker because ... well, I just said it ... I'm lazy and the crockpot is the lazy cook's best friend. Hey, using the slow cooker is pretty much the only way I get out of cooking every once in a while. (Back when we first got married, I tried assigning Mr. Ninj a cooking night once a week to give me a break -- he missed the point about "cooking" and just ordered Chinese every week, so I gave up.)

Slow cooker chicken and sweet potato curry

Slow cooker chicken and sweet potato curry requires little effort but yields lots of delicious dinnertime results -- plus plenty of leftovers.

Slow cooker chicken and sweet potato curry

Based on my Pinterest feed, you'd think that no one eats anything other than cookies, pecan pie and party appetizers during the entire month of December.

While cookie exchanges, office potlucks and party dessert tables are all awesome, let's not forget that there are still a whole bunch of dinners that need to be made and eaten this month.

Now, that doesn't mean those dinners have to be elaborate or complicated -- let's save elaborate and complicated for the buche de Noel and gingerbread houses. With everything you've got going on, you need at least one thing to be simple.

And what's simpler than a slow cooker dinner? Pretty much nothing, my friend.

Regular readers know that, as much as I love CSA produce, I'm just a wee bit of a meatasaurus. Case in point, this chicken and sweet potato curry. I adapted it from a vegetarian Bon Appetit recipe, touted for its ability to please everyone, no matter what their food issues.

Well, oops -- I just screwed the vegetarians and the vegans by adding chicken. But unless you're a vegetarian or a vegan, you will thank me.

Slow cooker chicken noodle stew

Break out your slow cooker for this super easy chicken noodle stew, a hearty, filling meal with all the comfort-food qualities of homemade chicken noodle soup.

Hearty slow cooker chicken noodle stew

When the weather starts turning chillier, I love to make soup -- especially in my slow cooker. Oh heck, let's be honest: I love to make anything and everything in my slow cooker because, frankly, I'm pretty lazy.

Yes, I am! Obviously, I love to cook or we wouldn't be chatting like this every week. But getting a homemade dinner on the table every night is sometimes just a royal pain in the ass, even for a food blogger. And that, my friends, is why I love, nay worship my slow cooker -- so much so that I now own two of them.

Back to the soup. While a hot bowl of soup is always warming and welcome for dinner, occasionally it's just not hearty enough to stand alone as a full meal for me. So if you don't want to have to also whip up some grilled cheese or a salad to accompany your soup, take my advice: Turn it into stew.

Crockpot white bean chili with chicken and corn

Need a quick dinner? Try this easy set-it-and-forget-it slow cooker white bean chili with chicken or turkey and corn.

Crockpot white bean chili with chicken and corn

With less than a week to go until Thanksgiving, my Facebook feed is full of nothing but pictures of Thanksgiving dishes.

If I see one more photo of pumpkin pie, I may spontaneously combust.

So, since we've all got our hands full with planning the big meal or getting prepped for the over-the-river-and-through-the-woods roadtrip, The Ninj decided you need a break from all this holiday fallderall.

Get out yer crockpot and make yer life easy: whip up a big batch of chili so you can get on with everything else on your list.

I wound up creating this chili based on one that I tasted as part of a chili cookoff a few weeks ago at which I, The Ninj, was asked to be the "celebrity judge" (their words, not mine).

OMG, peeps, someone considers me a freakin' celebrity. I am so stoked.

At the cookoff, I tasted twelve different chili recipes in about fifteen minutes. Dudes: that's a lot of chili that, frankly, all started to taste the same after about six samples.

Except one.

Vietnamese slow cooker chicken with bok choy

Vietnamese slow cooker chicken with bok choy: this easy weeknight dinner is prepped in 5 minutes and has a sweet, ginger-soy flavor.

Gingery Vietnamese slow cooker chicken with bok choy

Even though I can see acres of grass and almost no snow, it's still winter here in Vermont. Which also means that it's still slow cooker season.

I won't wax poetic about the advantages of a slow cooker meal, as you've heard them all before. (Although I do pat myself on the back for making a convert out of reader Cristina who finally got her very own slow cooker for xmas this year based on my nagging and is now hooked!)

So what could possibly make this slow cooker recipe that much more wicked than all others I have tried? Three things:
  1. It has essentially three ingredients: chicken, bok choy and sauce.
  2. Because it has so few ingredients, it is moronically easy and fast.
  3. The flavor is HEAVENLY! (Not to mention the aroma that will fill the house -- ay yi yi!)
I also love how I found this recipe -- yep, Pinterest. It's been catching on like a house-a-fire within the past month or two, and so many more participants means so many more great recipes to check out (among other things, like decorating tips, new light fixtures, cool DIY projects ... it's endless).
