Easy weeknight chicken minestrone

Get a warm, hearty dinner on the table in less than 30 minutes with this healthy and easy weeknight chicken minestrone soup.

healthy easy weeknight chicken minestrone

It's October and the weather is starting to get cooler. So of course I can't stop making soup and chili. And basically anything I can cram into the slow cooker.

Easy Weeknight Soup

Of course, any soup that I'm making now has to be easy enough for a busy weeknight meal. This one fits the bill, as it takes less than a half hour, including prep, to pull it together.

And did I mention that there will be enough left over for tomorrow's lunch bag? Winning.

Fast and fresh ranch pasta salad

This fast and fresh ranch pasta salad with crunchy summer veggies and chicken makes an easy, healthy weeknight meal or potluck dish.

fast and fresh ranch pasta salad from YankeeKitchenNinja.com

I originally created this recipe while we lived in Vermont. And were once again in the midst of moving.

I know, it's like deja vu, right? But don't worry. I'm not moving again. (You hear me, universe? I. AM. NOT. MOVING. AGAIN.)

But, as you can imagine, moving has a way of cutting into the time (and energy) available for cooking dinner. As does hot summer weather, which we've been experiencing here in Maryland in full force over the past few weeks.

So, just as I did back when we were moving, I've lately been keeping my menu planning focused on quick and easy recipes -- especially the low- or no-cook kind.

Case in point, this easy, fast and fresh ranch pasta salad, which you can throw together in the time it takes to cook a pot of pasta, yet is cool, full of fresh veggies and very satisfying. Plus, it will leave you with lunch leftovers that you don't even need to reheat.

Healthy one pot turkey pilaf

Master weeknight dinner with one pot turkey pilaf: only 30 minutes to a healthy delicious dinner with minimal clean up plus leftovers.

Healthy and easy one pot turkey pilaf

Another busy week means another entry for my list of healthy and easy weeknight meals that anyone can make -- one-pot turkey pilaf.

Lazy me is a big fan of easy, one-pot dishes, as evidenced by some of my favorite recipes, including one-pot tomato basil pasta and healthy one-pot Asian pasta. I mean, seriously, what's not to love?

In less than half an hour, from start to finish, you can have a healthy, delicious dinner on the table. With leftovers for lunch the next day, too.

Skinny red pepper chicken sliders

Make these broiled skinny red pepper chicken sliders for a fun and fast weeknight dinner.

Skinny red pepper chicken sliders recipe

I've got another slider recipe for you today -- skinny red pepper chicken sliders, to be specific -- and it's quite honestly because burger buns come in insanely large packages and I hate to waste them.

I'm serious. Think about it. We are just two people but whenever we want to enjoy burgers, I always get stuck buying a package of 8 freakin' burger buns. What's up with that? Does a family of four really eat two burgers each every time it grills? I highly doubt it. So why can't anyone make a package of only four buns -- ostensibly a half package -- for smaller families? I can't be the only one that would be excited about that.

And yes, I've tried freezing the extras. But then I just end up three months later throwing out a bunch of small packages of frozen leftover burger buns instead of day-old ones because, frankly, they never taste any good once thawed, no matter how cleverly I wrap them prior to freezing.

Le sigh.

So my efforts to be frugal and not wasteful with my package of 16 slider buns means that you get a second slider recipe in a row. But this is not a bad thing, trust me. These skinny red pepper chicken sliders are also a great way to use up that half-empty jar of roasted red peppers that's been hanging around your refrigerator door -- not to mention the jar of pepperoncini you just bought to make last week's tangy slow cooker pot roast sliders.

Slow cooker chicken stock

Learn how to make recipe-ready, freezable slow cooker chicken stock from only the bones of a roast chicken, a handful of veggies and water.

Slow cooker chicken stock made with a roast chicken carcass

This is one of those recipes for DIY pantry staples that has been in my repertoire for years yet I haven't shared it with you yet.

Shame on me! I think it's because it's one of those not-really-a-recipe recipes that hasn't seemed "worthy" enough. Until now. Because I've been crockpot cray cray lately, as regular readers well know.

If you've never tackled homemade chicken stock, this slow cooker version will change your mind. It's not at all time-consuming because, well, SLOW COOKER. Plus, all you need to make it is the carcass of your last roast chicken (read: NO WASTE! Practically composting!), some common veggies you've likely always got in your fridge, some spices and water.

Talk about making something out of nothing!

Here's what you do: The next time you make a roast chicken, be a little less thorough than you might be when carving it -- leaving a little bit of meat on the bones means a more flavorful stock.

Slow cooker chicken corn chowder

This healthy chicken corn chowder is made effortlessly in the slow cooker -- an easy and satisfying weeknight comfort food dinner.

skinny slow cooker chicken corn chowder

I'm back with another slow cooker recipe.

Seriously: I've been on a slow cooker tear lately -- largely because I am single-handedly painting the interior of our new house (I know, I'm insane. Or just cheap. Or both). As you would guess, this is more than a bit time-consuming and tiring. By the time I finish up for the day, the last thing I want to think about is making dinner.

And you know how I feel about take out. Well, I might consider it if there was any place other than Domino's in my new 'hood that delivered to a house beyond walking distance from the local university... but there's not.

So I've been focusing on making the easiest weeknight dinners possible. Which is why I'm working my slow cooker overtime. Especially with no-prep-required slow cooker recipes, like this skinny chicken corn chowder.

Healthy slow cooker cashew chicken tacos

Whip up these easy, healthy cashew chicken tacos in the slow cooker as a weeknight dinner or a crowd-pleasing party appetizer.

Slow cooker cashew chicken tacos: healthy, easy, gluten-free

I know: another slow cooker recipe. But really, can you blame me? They're so good and so freakin' easy -- it almost feels like having someone make dinner for me for a change.

Almost.

And this slow cooker cashew chicken taco recipe is no exception to the so-good-so-easy theme. Simply blend up a five-ingredient sauce, pour it over chicken in the slow cooker and -- SHAZAM -- a few hours later, you've got tacos!

It's a pretty perfect healthy and easy weeknight dinner recipe. Plus, if you use corn tortillas instead of flour ones, it's a gluten-free dinner recipe, too.

Easiest slow cooker chicken tikka masala

You're going to love this healthy recipe for making amazing chicken tikka masala effortlessly in your slow cooker.

Easy, healthy recipe for chicken tikka masala made effortlessly in a slow cooker

Regular readers know I'm more than a little obsessed with slow cooker meals -- heck, with making anything in my slow cooker. And not simply the usual soup or chili but also the unexpected: oatmeal, cake, bread pudding -- nothing is off limits.

It's largely because I am all about recipes that are not only healthy and delicious but also easy or even downright effortless.

Which is why it drives me absolutely bananas when I see slow cooker recipes that require pre-crock stovetop preparation. What is up with that? The whole point of the slow cooker, for me, is to make meal prep easier, not add extra steps.

I just don't get it. Why put the effort back into something effortless?

Thai green curry noodle bowl

Thai green curry noodle bowl: lots of sweet, tangy Thai food flavor in a lightened noodle bowl for a quick, healthy weeknight dinner.

Light and easy thai green curry noodle bowl

Yo, peeps: I'm back.

Sorry for being relatively incommunicado over the busy holiday season. It was extra extra busy for The Ninj because ... brace yourselves ... we moved. Again. To yet another state.

(I know, right?)

After bidding farewell to Kentucky, we are now happily ensconced on Maryland's Eastern Shore. (Job 1: I'm personally judging the crab cakes and shrimp salad sandwiches at every local establishment I can find. I mean, how else will I be able to identify The Best?!)

If you've read any of my previous adventures-in-moving posts, you know there's a lot of stress involved. And living in a house that looks like it's built out of moving boxes. And trips to the dump-I-mean-recycling-center. And inability to locate food photography props.

Luckily for you, that box was recently unearthed, which allowed me to photograph and now share this amazing Thai green curry noodle bowl with you.

Trust me, you are going to want to make this for a weeknight dinner ASAP.

Maple ginger chicken and apples

Tender and saucy maple ginger chicken and apples: perfect fall comfort food that's healthy and super easy to prepare.

healthy and easy maple ginger chicken and apples

Given that it's finally starting to feel like fall, I seem to be eating a lot of cold-weather comfort foods. Gone are my insatiable cravings for cool summer salads or still-warm sun tea. Now, I'm all about slow roasting and crockpotting.

But still no pumpkin. I'm just not feeling the pumpkin love this year for some reason. No, I know the reason: too much pumpkin-spice this and pumpkin-laden that all over my social media feeds. I just can't do it. Not when there are so many other way more delicious fall fruits and veg out there, just waiting to be featured in a comfort food recipe. Like apples.

Clearly my awesome blogging friend Katie Webster of Healthy Seasonal Recipes agrees with me, as the recipe I'm sharing today for maple ginger chicken and apples comes directly from her new cookbook, Maple: 100 Sweet and Savory Recipes Featuring Maple Syrup. Peeps: I am over-the-moon excited about this book -- and not just because Katie is super-talented and one of the nicest people you could ever hope to meet. Like me, Katie is all about real-food recipes, made with fresh, healthy and seasonal ingredients that everyone in your family will go cray cray for. I have little post-it flags on more recipe pages than I can count in this cookbook. I'm a little bit in love with it and plan to give a copy to everyone I know for the holidays.

But you don't have to wait for the holidays because I'm going to give away a copy of Katie's cookbook to one of you this week! Simply follow the instructions in the widget following the recipe for your chance to win a copy.

Crockpot chicken tamale pie with cornbread crust

This healthy crockpot chicken tamale pie cooks low and slow during the day and is finished with a spicy, crunchy cornmeal crust.

crockpot chicken tamale pie with cornbread crust

Fall is one of my favorite times of the year. As much as I love summer, especially for its t-shirt and flip flops easy-peasy dress code, I'm always excited when fall arrives. Cooler temperatures, snuggly sweaters, crisp autumn leaves -- I love it.

Fall is also a great time for slow cooker recipes. A good slow cooker recipe can make the whole house smell like home-cooked goodness, without your needing to lift much more than a finger.

While this crockpot chicken tamale pie with cornbread crust is technically finished off in the oven, it's still a hugely easy recipe, perfect for weeknight dinners or for when you have a house full of guests to feed and you actually want to spend time with them instead of locked away in the kitchen.

We normally think of tamale pie as being made with fattier pork cuts; to keep this dish on the healthier side, I've used boneless skinless chicken breasts.

The flavors are bold and just a little spicy, so it's totally kid-friendly. But if you're more adventurous, feel free to add the other half of that jalapeño in the ingredient list to the sauce.

Chicken sliders with spicy slaw

Bake these chicken sliders topped with crunchy, spicy slaw for an easy weeknight meal or grill them as a fun addition to a backyard BBQ.

Easy baked or grilled chicken sliders topped with spicy slaw

Even thought it's summertime, I still like to use my oven for weeknight meals. While the grill is great (largely because it gets Mr. Ninj involved in preparing the meal!), sometimes it's easier for me to throw dinner in the oven and not have to monitor it as closely as when we grill outdoors.

One thing I love about these cute chicken sliders with spicy slaw is that they are perfect for either cooking method, baking or grilling, based largely on the little bit of mayo that's part of the burger mixture to ensure they stay nice and moist while cooking.

But whichever way you prefer to prepare them, please don't skip the spicy slaw on top.

Slaw on burgers: is this new to you? Since I love creamy chopped coleslaw on a pulled pork sandwich, I figured adding slaw to a chicken slider isn't much different. Maybe a little messy (definitely a recipe I would add to my "Don't Eat on a First Date or Job Interview" list), but I love the extra crunch that the slaw adds.

Plus, putting the slaw on rather than next to the chicken sliders means no additional condiments are necessary, keeping it a little bit lighter.

And we're all about lighter around here.

Healthy one pot Asian pasta

Get a complete, good-for-you dinner on the table in 10 minutes with this one pot Asian pasta. Weeknight dinnertime just got easier -- and healthier!

One pot Asian pasta -- healthy dinner in 10 minutes!

Have you tried my one pot tomato basil pasta? Somehow I bet you have, as it's the most popular recipe on this site. Seriously popular: 126,000-people's-eyeballs-looking-at-it popular. (Squeeeeeeee!)

That means I don't have to be a rocket scientist to understand that you love you some quick-and-easy weeknight meals. With pasta.

Well, guess what? ME, TOO!

Which is why I've come up with another one-pot pasta for you. As with the one pot tomato basil pasta, it's ridiculously easy and comes together in one pot in 10 minutes. Yes! Ten minutes to dinner, plus leftovers for lunch.

And this one pot Asian pasta is healthy, too, loaded with good-for-you veg like peppers, carrots, mushrooms and bok choy. Plus, the pasta is whole wheat (feel free to opt for a gluten-free pasta if that's your jam). With or without chicken, it's a healthy, complete dinner that I know your entire family will love.

And it's ready in 10 freakin' minutes, people!!

No lie. If you haven't yet tried one of these one-pot wonder pastas, you're going to go cray cray over this. You simply throw all the ingredients into one large pot, bring it to a boil, stir like a maniac and then -- WHAM! -- dinner is complete.

What could be easier?

Slow cooker chicken pho

Easy spicy and aromatic chicken pho, made simply and effortlessly (and gluten-free) in the slow cooker.

Easy crockpot chicken pho noodle soup

Guess what? We're moving again! Don't panic -- this is merely a cross-town move, not another relocation (OMG, even mentioning the word "relocation" makes me break out in a sweat.)

Just moving across town should be easy, right? No packing bags of rice in 14 pounds of packing paper to protect it as it crosses state lines, right?

Well, yes and no. Yes in that things can be packed more haphazardly and quickly. No in that I AM THE PACKER AND MOVER -- and yes, I'm screaming.

(I'm also doing my most epic I-told-you-so dance for Mr. Ninj, who basically accused me of being a hoarder when I decided to save all the boxes and packing paper from our move last August. HA!)

I'm telling you all of this because you will see the influence of the added packing and moving workload in my posts over the next few weeks: Get ready for lots of quick-and-easy dishes and treats! Starting today, with this slow cooker chicken pho.

The slow cooker is going to be my new BFF during this transition, I can tell.

Baked poutine spring rolls

While I have been compensated for this poutine spring roll recipe by #CollectiveBias and its advertisers, all opinions are my own. Thanks for supporting the brands that support me!  #SpringIntoFlavor

poutine spring rolls - a unique appetizer or light meal

Baked poutine spring rolls, filled with sweet potato fries, grilled chicken and cheddar cheese, with mushroom gravy dipping sauce. Comfort food done light.

Regular readers know I'm a huge fan of poutine, that Quebecois comfort-food favorite of crispy french fries smothered with rich beef gravy and melty cheese curds. Talk about comfort!

But, in the same breath, I have talk about how not-so-healthy poutine can be -- which is why we don't eat it very often.

Leave it to The Ninj to figure out a way to get all the comfort-food flavor of poutine in a lighter, fresher package: poutine spring rolls, filled with sweet potato fries, grilled chicken and sharp cheddar cheese and served with a mushroom gravy dipping sauce.

While these poutine spring rolls may look complicated and decadent, I swear they're neither. For one, they're baked, not fried, which makes them that much healthier -- as well as easy to make. Plus, I've swapped the heavy cheese curds for just a sprinkle of sharp cheddar cheese and the thick gravy for a much lighter mushroom dipping sauce. They're comfort food done light.

Crunchy bok choy salad

Crunchy bok choy salad, with a clever ramen noodle topping and a sweet-and-spicy peanut dressing: an easy, healthy weeknight meal.

crunchy bok choy salad

This is one of those recipes that I've been making for years -- one of my go-to, healthy and easy weeknight meals that I really should have shared with you long ago.

Maybe it's fate. Maybe the universe wanted me to be ready to photograph it really, really well so that you'll be convinced to try it and spread the good news of the bok choy salad. And its three secret weapons.

Secret Weapon #1: Ramen noodles.

Yes, ramen freaking noodles. Yes, the kind that you buy in the little cellophane packages for 22 cents or some ridiculous pittance like that. But just the noodles, mind you, not the nasty little packet of "flavor."

And you don't even need to cook the noodles. Just put the package on a hard surface, smash it all up with your fist, then open the bag and throw out the flavor package.

Voila: Instant crunchy salad topper.

(I know, right?)

But wait: There's more.

Slow cooker soy and citrus chicken

Sweet and tangy slow cooker soy and citrus chicken, flavored with warm spices, soy, ginger and orange: a simple, healthy, one-pot meal.

slow cooker soy and citrus chicken

What is it about cold weather that turns me into a slow cooker junkie?

I swear, it's a good thing I own more than one slow cooker because when the weather turns chilly, I've been know to have them cooking round the clock: I start one with overnight oatmeal for breakfast before I go to sleep and then immediately fire up another as soon I get up with a batch of chicken stew or butternut chili.

I also like my slow cooker for busy weeknight meals. What a treat to have a whole meal ready to go, nearly effortlessly, at the end of a long day.

If that's the way you use your slow cooker, too, you're going to be completely jazzed about this slow cooker soy and citrus chicken. This sweet and tangy chicken takes only a few minutes of prep and is so flavorful you only need to serve it on a bed of fresh greens for a healthy, delicious, one-pot meal.

Slow cooker chicken and white bean soup

This easy, slow cooker chicken and white bean soup is loaded with two types of protein, fresh herbs and healthy veggies: a perfect warming weeknight dinner.

easy slow cooker chicken and white bean soup

How has the weather been in your area lately? Cold? Snowy? If so, I bet you've been thinking a lot about soup, chili and other warming winter dinners.

I know I have.

But no wussy soups for me this time of year. Nosirreebob. The Ninj craves a hearty, filling soup, with protein and veggies, that makes a whole meal in and of itself.

(Largely this is because I'm lazy and don't want to have to make a salad to go with my soup, but let's just keep that between us, mmmmkay?)

Speaking of lazy, I'm a huge fan of soups made in the slow cooker because ... well, I just said it ... I'm lazy and the crockpot is the lazy cook's best friend. Hey, using the slow cooker is pretty much the only way I get out of cooking every once in a while. (Back when we first got married, I tried assigning Mr. Ninj a cooking night once a week to give me a break -- he missed the point about "cooking" and just ordered Chinese every week, so I gave up.)

Slow cooker chicken and sweet potato curry

Slow cooker chicken and sweet potato curry requires little effort but yields lots of delicious dinnertime results -- plus plenty of leftovers.

Slow cooker chicken and sweet potato curry

Based on my Pinterest feed, you'd think that no one eats anything other than cookies, pecan pie and party appetizers during the entire month of December.

While cookie exchanges, office potlucks and party dessert tables are all awesome, let's not forget that there are still a whole bunch of dinners that need to be made and eaten this month.

Now, that doesn't mean those dinners have to be elaborate or complicated -- let's save elaborate and complicated for the buche de Noel and gingerbread houses. With everything you've got going on, you need at least one thing to be simple.

And what's simpler than a slow cooker dinner? Pretty much nothing, my friend.

Regular readers know that, as much as I love CSA produce, I'm just a wee bit of a meatasaurus. Case in point, this chicken and sweet potato curry. I adapted it from a vegetarian Bon Appetit recipe, touted for its ability to please everyone, no matter what their food issues.

Well, oops -- I just screwed the vegetarians and the vegans by adding chicken. But unless you're a vegetarian or a vegan, you will thank me.

Turkey cordon bleu pasta

Use your holiday leftovers in this recipe for deconstructed turkey (or chicken) cordon bleu pasta: quick and easy to make, lighter than you'd think.

Turkey or chicken cordon bleu pasta, great use for holiday leftovers

As I promised last week, I'm continuing my Thanksgiving leftovers posts this week, despite the fact that Thanksgiving hasn't even arrived yet, because I love using up the leftovers almost as much as preparing the holiday feast. So much so that a reader suggested I make two turkeys this year.

An excellent suggestion!

Since there are only so many turkey sandwiches that you can eat before you get sick of the stuff, I like to change it up with different kinds of dishes, such as last week's turkey, apple and fennel bread salad (I'm still eating it regularly, people -- it's that good). Another great one? Today's turkey cordon bleu pasta.

Yes, pasta! You know, because nearly all my favorite comfort foods are pasta, I swear.

Now, this is not quite the same as the chicken cordon bleu you might be envisioning -- there's no pounding, no stuffing, no breading, no layering and nothing at all French-ish (even though traditional Chicken Cordon Bleu, I'm told, is all-American and has nothing to do with France or the similarly named culinary institute -- go figure). So it's more of a deconstructed chicken cordon bleu. But with turkey. And pasta.
