Packed with protein to keep you feeling full and energized, white bean and avocado toast is the perfect savory breakfast or easy, light lunch.
It's easy to get into a breakfast rut, especially when you're in hurry, as most of us are each morning. Bless his heart, Mr. Ninj is perfectly content to eat the same egg sandwich or oatmeal smoothie that I put in front of him every morning, but I, on the other hand, need to change things up. And while baked goods like muffins are an awesome grab-and-go option, sometimes I need a savory, not sweet, breakfast.
So I was pretty excited when Pepperidge Farm® asked me to come up with a healthy and delicious recipe featuring toast. Yes, toast, which, when simply buttered and served with a plate of eggs can be a little ho-hum.
But this is not that.
We all love a good slice of avocado toast, whether for a quick breakfast or an afternoon snack. I've elevated it to healthy breakfast status by adding a layer of mashed white beans, loaded with keep-away-the-mid-morning-hungries protein, and topping it all with some veggies.
This, my friends, is a good-for-you, savory breakfast toast that's not only delicious but also has amazing staying power.

White bean burgers (Secret Recipe Club)
These simple, healthy white bean burgers with a yogurt feta sauce are super flavorful and won't fall apart like many veggie burgers.

I made this recipe in 2013 as part of the Secret Recipe Club (SRC).
Here's how the SRC works: each month I am assigned another member's blog (a different one each month). I then pick any recipe from that blogger's site, make it and write about it here. There's also a link hop at the end of the post so that I (and you) can check out all the other participating blogs and their great recipes.
I was a little nervous about this month's assignment, as I knew it would fall right during Detox January. I had my fingers crossed that I would be assigned a blog with at least a couple of healthy recipes from which I could choose.
I hit the jackpot!
My assigned blog was Cooking Whims, written by Megan, another New Englandah (yay!). Megan is clearly a big fan of Cooking Light recipes, as am I, so I was thrilled to find so many things to try. In fact, I wound up making two of her recipes and had a hard time choosing which one to feature (really, it came down to which one yielded a better photo).
The winner? White bean burgers, a perfect, meatless dinner option for Detox January.

Skinny black bean tortilla casserole
Skinny black bean tortilla casserole is a healthy, fast and easy way to add a satisfying meatless meal to your weeknight dinner rotation.
This may sound really weird but it's really exciting: I've rediscovered the public library.
I told you it would sound weird. I mean, where did it go that I had to rediscover it, right?
I grew up as a library power user: in elementary school, I couldn't wait for summer, not just for the swimming and playing outside and not attending class part but also for the summer reading program at my tiny local library. Whether I knew it or not, I was a lot more Type A back then and the reading program had a contest for which child could read the most books: Let's just say I rose to that challenge and then some.
Not to mention that I just loved spending time in the library itself. It seemed magical to me that I could wander around, browsing through a seemingly endless supply of novels, taking as long as I liked to make my selections and then I was allowed to just take them home. For free. It was better than a candy store for an avid reader.
Even as an adult, I made weekly visits to the library after work to refresh my book pile, largely because I tried to spend my lunch hours reading the novels I so love. The number of books I read each year was a little mind boggling.
But then something changed all that: We moved to a tiny town in Vermont.

Skinny taco soup
This skinny taco soup has all the flavor and crunch of a loaded taco but in a healthy, easy-to-make, comfort-food soup.
Does anyone make soup in the summer? Or is it just a cold-weather comfort-food thing? Which it definitely is for me.
And I particularly love a good, hearty soup -- not quite as thick as a stew but still filling enough to be an entire meal unto itself.
This skinny taco soup is just such a soup. It's got all flavors of a taco -- spicy chilis, browned turkey, crunchy tortillas and sharp cheddar cheese -- in an easy-to-make soup. Plus there's a whole load of good-for-you beans and veggies thrown in to make it a healthy weeknight meal.

Healthy 10 minute taco salad
Healthy taco salad: loaded with veggies, lean beef and beans, it doesn't skimp on taste or crunch yet takes less than 10 minutes to prepare.
National Salad Month may be behind us, but you'd never know it if you're eating dinner at Casa de Ninj.
I think it's the change in the weather and the arrival of fresh produce (well, some) at the local farm markets. It makes me want to cram in as much fresh veg as I can.
Yet, I am still The Meatasaurus, which means that many of my favorite salads include a healthy portion of protein as well as crisp, crunchy veg.
And this 10-minute taco salad is no exception. Plus, it gets its protein boost from a mixture of super-lean ground beef and black beans.
And yes, it takes less than 10 minutes to assemble this whole taco salad. Ten minutes! Everyone has 10 minutes to prepare dinner! Are you psyched now?

Black bean sweet potato burgers
You won't miss the meat in this flavorful, hearty veggie burger, loaded with healthy sweet potato, black beans and sharp cheddar cheese.
In your efforts to eat healthier, have you embraced more meatless meals?
We try to, but it's hard when you love bacon and sausage -- and only half-jokingly refer to yourself as The Meatasaurus.
One way we've successfully enjoyed more meatless dinners is with veggie burgers. If your only experience with veggie burgers are those frozen, cardboard-like discs that come four-to-a-box in your grocer's freezer, it's time to put down the processed food and make your own.
A good, homemade veggie burger can truly be a delicious substitute for a traditional grilled burger (not all the time, mind you -- clearly I'm not that cray cray). I love to make big batches of them to keep on hand in the freezer for times when I need a quick lunch or I'm at a loss as to what to make for dinner. They can go from freezer to table in less than 15 minutes.
To keep the freezer back-up meals interesting, I've added this new black bean and sweet potato burger to the stash. It was inspired by a recipe from the brand-new Cabot Creamery Cookbook, which is officially available online or at your favorite bookstore as of today! If you're a fan of cheese (lordy, I do not want to meet the person who isn't a fan of cheese), do yourself a favor and pick up a copy of this cookbook. The recipes -- for everything from entrees to desserts -- are delish, the photos are gorgeous: it's a real treat.

Slow cooker chicken and white bean soup
This easy, slow cooker chicken and white bean soup is loaded with two types of protein, fresh herbs and healthy veggies: a perfect warming weeknight dinner.
How has the weather been in your area lately? Cold? Snowy? If so, I bet you've been thinking a lot about soup, chili and other warming winter dinners.
I know I have.
But no wussy soups for me this time of year. Nosirreebob. The Ninj craves a hearty, filling soup, with protein and veggies, that makes a whole meal in and of itself.
(Largely this is because I'm lazy and don't want to have to make a salad to go with my soup, but let's just keep that between us, mmmmkay?)
Speaking of lazy, I'm a huge fan of soups made in the slow cooker because ... well, I just said it ... I'm lazy and the crockpot is the lazy cook's best friend. Hey, using the slow cooker is pretty much the only way I get out of cooking every once in a while. (Back when we first got married, I tried assigning Mr. Ninj a cooking night once a week to give me a break -- he missed the point about "cooking" and just ordered Chinese every week, so I gave up.)

Black bean and avocado quinoa bowl
Easy black bean and avocado quinoa bowl, with spicy arugula, sharp cheddar cheese and homemade pico de gallo: a healthy meal in 15 minutes.
Regular readers know that I'm all about healthy, easy weeknight dinners. While I can appreciate a complex and involved dinner recipe when the outcome is amazing, I reserve them for weekends when there's more time for meal preparation. During the week, I'm still into amazing outcomes, but I want to achieve them much more quickly.
I like to make grain bowls for dinner because they are easy but also really nutritious, with seemingly endless combinations of ingredients. While I used to make almost exclusively rice bowls, I now favor quinoa for these flavorful bowls -- I love the little extra crunch, plus it's easy to freeze and thaw.
This particular bowl, with black beans, creamy avocado, spicy arugula and sharp cheddar cheese, was born because I had a few extra tomatoes from the farmer's market hanging around. Rather than simply chop them up and add them to the bowl, I decided to turn them into a bold pico de gallo, using an easy recipe I picked up from Chris of Shared Appetite.

Naan panzanella salad
Enjoy this quick-to-prepare riff on rustic Italian panzanella salad, with lightly fried naan and a bright lemony dressing -- an easy summery meal salad, perfect for a weeknight dinner or hearty lunch.
It's not quite summer yet, but I've been a summery meal salad kick lately.
Perhaps it's just wishful thinking. Perhaps I'm doing it to appease the weather gods so that they won't throw a late frost at me, just as I'm beginning to get my summer garden planted. (Oh please oh please oh please)
I love meal salads and am always looking for new ideas to make them interesting. Lately I've been throwing savory granola into my salads for a little extra crunch: highly recommended. Chocolate berry black bean Mason jar smoothie
Attach a Mason jar to your blender to whip up this healthy chocolate-strawberry-black-bean smoothie -- dairy-free and naturally sweetened, it's the perfect good-for-you afternoon snack.
OMG, y'all: The Mason jar blender smoothie is not an urban myth! I still cannot quite believe that something crafty I saw on Pinterest actually worked.
This is a smoothie game-changer for me.
I love smoothies as much as the next person. I really do. Heck, I've got a bunch of smoothie recipes on this site. But I hate hate HATE to clean the blender. Did I say hate? I mean REALLY hate. Hand-washing is not my thing, so I don't make smoothies nearly as much as I'd like.
I know, it's sadly, pathetically lazy but hey, we've all got our issues, right?
Enter the Mason jar blender smoothie. (Again, I'm still reeling that this is not a lie.)
If you separate the blade attachment thingy from the pitcher portion of your blender, you can screw the blade attachment thingy right onto a Mason jar! And then, after you whirl it up, you can drink it directly from the jar! Not even an extra glass to wash! ERMERGAHD: Lazy person's dream!
I kid you not: I have photos.

Chipotle black bean quinoa casserole (gluten-free)
Gluten-free chipotle black bean and quinoa casserole -- a spicy, hearty, meatless weeknight dinner recipe that's oh so easy and cheesy.
Guess what? I've got another great recipe to add to your easy and healthy weeknight dinner list: chipotle black bean and quinoa casserole. And odds are you have most of the ingredients on hand on any given weeknight.
This casserole is not only delicious and filling, it's also meatless, with all the protein coming from black beans. And the quinoa provides a touch of chewiness that adds to the heartiness of the overall dish. The key to the awesome spiciness comes from Cabot Chipotle Cheddar cheese -- just enough to give it a real kick without overpowering the cheesy flavor. Served with spicy salsa and cool avocado, either cubed or mashed into a lazy guacamole, you can enjoy this quinoa casserole as either a dinner entree or a brunch casserole, if you prefer savory brunch dishes.
And the recipe really couldn't be easier, which is why I think you'll enjoy making it as a weeknight dinner. Once the quinoa is cooked, mix all the ingredients together and bake. Easy peasy! And, as a bonus, it's gluten-free!

Crockpot white bean chili with chicken and corn
Need a quick dinner? Try this easy set-it-and-forget-it slow cooker white bean chili with chicken or turkey and corn.
With less than a week to go until Thanksgiving, my Facebook feed is full of nothing but pictures of Thanksgiving dishes.
If I see one more photo of pumpkin pie, I may spontaneously combust.
So, since we've all got our hands full with planning the big meal or getting prepped for the over-the-river-and-through-the-woods roadtrip, The Ninj decided you need a break from all this holiday fallderall.
Get out yer crockpot and make yer life easy: whip up a big batch of chili so you can get on with everything else on your list.
I wound up creating this chili based on one that I tasted as part of a chili cookoff a few weeks ago at which I, The Ninj, was asked to be the "celebrity judge" (their words, not mine).
OMG, peeps, someone considers me a freakin' celebrity. I am so stoked.
At the cookoff, I tasted twelve different chili recipes in about fifteen minutes. Dudes: that's a lot of chili that, frankly, all started to taste the same after about six samples.
Except one.

Pasta with butternut squash, broccoli and cranberry beans (guest post)
Hello fellow Ninja followers. Let me introduce myself. I am Sandra, and today we get to hang out together here in Julianne’s space. She was awesome enough to play a little blogger switch with me. That’s right, I am a fellow food blogger, but also a huge fan of The Ninj. I don’t have to tell you why she is so awesome because you frequent here regularly, too. The Ninj and I happened to connect the way most bloggers do, by chance. I quickly learned how cool she is by reading through a bunch of her recipes I found out we had a lot in common.
We like to cook. We like to can. We like to have fun. Not every food blogger is fun, believe me I know. We live a few states away, I’m in New Jersey, but I wish I lived in Vermont. I guess that doesn’t count. If we lived closer I’d like to think we would be friends that would hang out every so often. Hang out in a sense that I would raid her orchards the second she went grocery shopping. Like all good friends do, right? Seriously the Ninj is not only awesome, she is “I have fruit trees in my orchard” awesome! (I’d hit up the cherry tree first, who’s with me?)

CSA Share Ninja Rescue 2013: green beans
It's Monday once again -- the day we share the CSA Share Ninja Rescue, a weekly feature in which you tell me on Fridays what veg you got in your CSA share box (or found at the farmers' market) that you don't know what to do with and I'll give you a whole bunch of recipe ideas on the following Monday.
While I am still desperately waiting for tomatoes to start flooding the farmers' markets, beans are more than plentiful. Speaking from experience, there are only so many times your family will tolerate dinner with a side of steamed green beans before crying uncle. So this week we've got some fun and creative ways to use 'em up.
- Peach and green bean pasta: A seemingly odd combination but a wonderful summery dish -- trust me!
- Dilly beans: Pickle 'em quickly in the fridge, pop 'em in a Bloody Mary
- Green bean slaw: I love this as a side -- can't wait to try it on an egg sandwich (as shown)
- Tomato-green bean salad with shallot dressing: Great summer side, turn it into a main dish salad with a little chicken
- Green bean fries: These are fries you won't feel guilty about having with a big juicy burger
- Paprika shrimp and green bean saute: Zesty, with a hint of Mediterranean flavor

CSA Share Ninja Rescue 2013: zucchini, beets and fava beans (10 unique ways)
Welcome to another installment of the 2013 edition of CSA Share Ninja Rescue, a weekly feature in which you tell me on Fridays what veg you got in your CSA share box (or found at the farmers' market) that you don't know what to do with and I'll give you a whole bunch of recipe ideas on the following Monday.
Seriously: where else can you get recipe suggestions on demand? OK, other than Google? (snort)
Apparently, the zucchini giant has awoken. I'm still waiting for mine but my readers are already drowning in it. Additionally, other readers are looking for different ways to deal with an excess of beets and fava beans.
So let's jump right in, shall we?
Zucchini
- Lemon zucchini cookies: Citrusy, but they still let the zucchini flavor and texture come through
- Summer harvest zucchini bread: It's like an entire garden in one loaf (pictured above) -- and it's savory
- Sauteed zucchini: This one is simple and comes to you courtesy of my cousin, Susan -- a little side dish her mother, Anna, created to use up zucchini. Add some olive oil to a pan, throw in some minced garlic and shredded zucchini. It tastes almost like broccoli.
- Cider vinegar pickled beets: Really unique flavor from oregano and thyme
- Beet veggie burgers: So gorgeous and so yummy
- Beet pesto: Probably more like a tapanade than pesto -- makes amazing (and beautiful) crostini
- Beet bread: ZOMG, it's pink bread! Your kids will flip!
- Grilled fava beans: Perfect if you hate shelling the beans first -- they pop right out after grilling
- Fava puree: Another option for making gorgeous, delicious appetizer crostini
- Fava bean burgers: Says the creator, "If a samosa and a falafel had a burger baby, this would be it"

But what a soup, my friends!
Regular readers know that my favorite recipes are those that meet the following criteria:
- Must be delicious
- Must be simple, ingredient-wise, so it can be made with pantry staples rather than a trip to an exotic market, as well as wicked easy to prepare (read: no creme brulee torches required)
- Should be stealthily healthy (that is, one bite should not prompt Mr. Ninj to say, "This must be good for me, right?")
About the same time I was reading in Eating Well magazine about low-calorie power soups inspired by a Weight Watchers garden vegetable soup, my friend Maria -- who I trust as an authority on healthy-yet-flavorful recipes, given that she is a caterer who also recently lost over 90 pounds -- posted the recipe for another Weight Watchers favorite: Seven-Can Soup.
The name says it all: seven cans of ingredients, thrown together in a pot, heated though and served.
Ridiculously easy!

If you're looking for a reason to join us when we do it all again next year, how about this: Mr. Ninj has already lost nine pounds and I've lost seven by following the simple DJ rules and nothing else: not drinking alcohol, trying to exercise just a little bit (I haven't had much success with this, as I pulled a muscle in my back while shoveling snow, dammit) and eating what you read about right here.
Including cookies!
I have a huge savory tooth, but, when I deny it for too long, my sweet tooth kicks in. That's what happened this week. The post I originally planned to write today was about something with kale and squash but yesterday I just couldn't take it anymore: I needed some cookies.
However, being committed to Detox January, I compromised by searching out a recipe for "healthy" cookies (OK, really, just cookies not loaded with butter or bacon, but that makes them technically healthy in my book).
And, since you know I especially like a stealthy recipe, you can understand why I gravitated toward this one: cookies made with black beans. And no butter (or bacon, sadly). And whole wheat flour.
Keep reading: they are not only not nasty but also wicked good. Really.
(I can see you rolling your eyes, you know.)

Here's how the SRC works: each month I am assigned another member's blog (a different one each month). I then pick any recipe from that blogger's site, make it and write about it here. There's also a link hop at the end of the post so that I (and you) can check out all the other participating blogs and their great recipes.
I joined this group a few months ago and it's been really fun, giving me an opportunity to check out a lot of blogs that normally wouldn't appear on my radar.
My assigned blog this month -- The Mommy Bowl -- is a great example of that.
You see, Deanna of The Mommy Bowl cooks a whole lot of gluten-free, dairy-free and often vegan dishes.
(Yes, if you know The Ninj, you are laughing hysterically at this point, because you know I like to throw bacon and cheese into nearly everything and have more than once referred to myself as The Meatasaurus.)
But come, come, I am nothing if not flexible. And I do like to try new things.

Crockpot turkey chili with butternut squash & apples ... and best-evah cornbread!
Easy crockpot turkey chili with black beans, butternut squash and apples -- plus the best-evah cornbread muffins!
Cold, rainy days just scream out for a big pot of chili.
What makes that pot of chili even better is when it's cooked in a crockpot all day long so you can go off and do other things.
Winner!
Speaking of winners, I made this chili a few years ago for an employee chili cookoff when I was working at a large security software firm (they called it the "Super Bowl of Chili" -- yeah, that's what passed for funny and clever to software developers). I did not win (so I guess the "speaking of winners" segue was a bit misleading -- sorry) but believe me when I tell you that I taught that group of geeks a thing or two about food presentation.
I like this chili recipe because it is loaded with veggies and the rest of the ingredients lean a bit to the lighter side; it has plenty of spice and flavor without promising to give you heartburn ... or worse.

Fauxsotto: an original recipe

I'm creative in the kitchen -- just not quite that creative. Yet.
But today, this one is all mine. And I'm really excited to share it with you because it meets my highest recipe criteria: wicked easy and wicked good.
Like many people, I love risotto but rarely ever make it because I can't be bothered with all that standing around and stirring. (I do have one baked risotto recipe up my sleeve that works like a dream -- it's on my to-do list to share with you, if I manage to get some photos of it the next time I make it.)
But I didn't set out to create my own risotto recipe or anything. I just reserve it as an order-in-a-restaurant-where-someone-gets-paid-to-stir treat.
But then I stumbled across a taste combination that got me thinking about making and easy risotto.
(Or fauxsotto, which I'm sure you figured out by now.)
It started innocently enough with a conversation with my sister-in-law, who was telling me about a bed-and-breakfast she stayed in in which the proprietors had created a Japanese inn-style ambience, including a traditional breakfast of raw eggs cracked into hot rice and mixed with some soy sauce. (According to Google, this is called tamago kake gohan in Japanese.) Using the same principle as spaghetti carbonara, the hot rice cooks the egg and gives it a nice creamy consistency.
Since I love a savory breakfast more than a sweet one, this really piqued my interest.
So one morning I gave it a try.
