Do you remember that Carly Simon song, "Anticipation"? The one used in the popular Heinz ketchup commercial when I was growing up? The one that evoked the feeling of not being able to wait to taste something? (Although ketchup -- really? I could wait, no problem, really.)

And it wasn't just me. The first time I made this slow cooker recipe, a pair of HVAC guys were working upstairs in our house, installing a new air conditioning system. At the end of the day, one of the guys said to me, "Well, we have a little problem."

I begin freaking out. You know, because I'm always so calm when problems arise (snort). "What's wrong?"

He replied, "We really don't mind working hard all day. But you made it really, really hard today since you've made us smell something that delicious all day long!"

Did I ever tell you that I lived in New Orleans for a while? (Yeah, like you're surprised anymore by the number of places The Ninj has lived...)

Let's just say it was a nice place to visit. :-)

But the food. Oh my gosh, the food. It's the only place I've ever lived where I gained more than 10 pounds really, really quickly. Because the food. Oh my gosh, the food.

In fact, I had never even eaten jambalaya until I lived in New Orleans. And I certainly had no idea the awesomeness that I was missing! Jambalaya is now one of my all-time favorite comfort foods -- and not just because of the smoked sausage.

Yet, as with long-cooking rice dishes like risotto, I never really made jambalaya a lot at home because it was too time-consuming.

Not so anymore, thanks to the slow cooker.

Pulled pork is one of my all-time favorite things to make in the slow cooker. And I think you're well aware of my penchant for transforming chicken into all sorts of awesome dishes in my crockpot. I don't know why I never really thought to do any kind of beef cut in the slow cooker. So when I saw this article in the New York Times about a slow cooker beef roast with some interesting spicy flavors, I knew I had to give it a shot.

Apparently, there's a version of this beef that went viral via Pinterest (called "Mississippi Roast", for some reason) -- but it calls for packaged dressing AND gravy mix. Ugh. No way -- you know that's not how The Ninj rolls. Especially when it's just as easy and no less time-consuming to use real ingredients.

Which is what's happened here.

This is one of those recipes for DIY pantry staples that has been in my repertoire for years yet I haven't shared it with you yet.

Shame on me! I think it's because it's one of those not-really-a-recipe recipes that hasn't seemed "worthy" enough. Until now. Because I've been crockpot cray cray lately, as regular readers well know.

If you've never tackled homemade chicken stock, this slow cooker version will change your mind. It's not at all time-consuming because, well, SLOW COOKER. Plus, all you need to make it is the carcass of your last roast chicken (read: NO WASTE! Practically composting!), some common veggies you've likely always got in your fridge, some spices and water.

Talk about making something out of nothing!

Here's what you do: The next time you make a roast chicken, be a little less thorough than you might be when carving it -- leaving a little bit of meat on the bones means a more flavorful stock.

I'm back with another slow cooker recipe.

Seriously: I've been on a slow cooker tear lately -- largely because I am single-handedly painting the interior of our new house (I know, I'm insane. Or just cheap. Or both). As you would guess, this is more than a bit time-consuming and tiring. By the time I finish up for the day, the last thing I want to think about is making dinner.

And you know how I feel about take out. Well, I might consider it if there was any place other than Domino's in my new 'hood that delivered to a house beyond walking distance from the local university... but there's not.

So I've been focusing on making the easiest weeknight dinners possible. Which is why I'm working my slow cooker overtime. Especially with no-prep-required slow cooker recipes, like this skinny chicken corn chowder.

Regular readers know I'm more than a little obsessed with slow cooker meals -- heck, with making anything in my slow cooker. And not simply the usual soup or chili but also the unexpected: oatmeal, cake, bread pudding -- nothing is off limits.

It's largely because I am all about recipes that are not only healthy and delicious but also easy or even downright effortless.

Which is why it drives me absolutely bananas when I see slow cooker recipes that require pre-crock stovetop preparation. What is up with that? The whole point of the slow cooker, for me, is to make meal prep easier, not add extra steps.

I just don't get it. Why put the effort back into something effortless?

As we near the end of October, I'm happy to say that I still haven't made or eaten anything with pumpkin in it -- AND I HAVE SURVIVED! Seriously, I'm not a pumpkin hater. Not at all. You'll find lots of pumpkin recipes here on the blog. But this year, pumpkin-spice everything has made me feel like taking a pumpkin holiday and focusing on enjoying the other fruits and veggies of fall.

Which is how I got hooked on this slow cooker sweet potato and cheddar soup. It's got a couple of canned chipotle peppers in adobo sauce cooked into it, which gives the soup just the right amount of smoky spiciness.

It's like taking all the best flavors and smells of fall and immersion blending them into a warming, comforting bowl of soup.

Makes me want to snuggle in front of a fire with a cozy chenille throw.

Which I could do if it would stop being 78 degrees outside every damned day! Jeez louise, enough already with the summertime: I am so ready for fall.

Fall is one of my favorite times of the year. As much as I love summer, especially for its t-shirt and flip flops easy-peasy dress code, I'm always excited when fall arrives. Cooler temperatures, snuggly sweaters, crisp autumn leaves -- I love it.

Fall is also a great time for slow cooker recipes. A good slow cooker recipe can make the whole house smell like home-cooked goodness, without your needing to lift much more than a finger.

While this crockpot chicken tamale pie with cornbread crust is technically finished off in the oven, it's still a hugely easy recipe, perfect for weeknight dinners or for when you have a house full of guests to feed and you actually want to spend time with them instead of locked away in the kitchen.

We normally think of tamale pie as being made with fattier pork cuts; to keep this dish on the healthier side, I've used boneless skinless chicken breasts.

The flavors are bold and just a little spicy, so it's totally kid-friendly. But if you're more adventurous, feel free to add the other half of that jalapeño in the ingredient list to the sauce.

I think this is going to be one of my favorite posts ever. And not only because these sweet and spicy slow cooker pork bowls are just about the best thing I have ever eaten. (Truth.)

Let me tell you why.

Regular readers are aware that I am a fur mom to a couple of nutso dogs. I consider them my babies (and, OMG, when did I become that crazy pet lady??!!). But apparently sometimes I think of them as too human and forget that they are really just food-crazed wildebeests who only occasionally listen and do what they're asked.


By now, you're probably asking yourself, what the heck does this have to do with slow cooker pulled pork?

As a food blogger, I'm always trying to get the perfect hero shot when I photograph my recipes. This photo shoot was no exception. Since I don't have a swanky expensive tripod with a crane arm like many of my blogging compadres, if I want to get a good overhead shot of a recipe, I often have to photograph my recipes on the floor.

Read that again: On. The. Floor.

I bet you can see where this is headed.

Guess what? We're moving again! Don't panic -- this is merely a cross-town move, not another relocation (OMG, even mentioning the word "relocation" makes me break out in a sweat.)

Just moving across town should be easy, right? No packing bags of rice in 14 pounds of packing paper to protect it as it crosses state lines, right?

Well, yes and no. Yes in that things can be packed more haphazardly and quickly. No in that I AM THE PACKER AND MOVER -- and yes, I'm screaming.

(I'm also doing my most epic I-told-you-so dance for Mr. Ninj, who basically accused me of being a hoarder when I decided to save all the boxes and packing paper from our move last August. HA!)

I'm telling you all of this because you will see the influence of the added packing and moving workload in my posts over the next few weeks: Get ready for lots of quick-and-easy dishes and treats! Starting today, with this slow cooker chicken pho.

The slow cooker is going to be my new BFF during this transition, I can tell.

I swear, it's a good thing I own more than one slow cooker because when the weather turns chilly, I've been know to have them cooking round the clock: I start one with overnight oatmeal for breakfast before I go to sleep and then immediately fire up another as soon I get up with a batch of chicken stew or butternut chili.

I also like my slow cooker for busy weeknight meals. What a treat to have a whole meal ready to go, nearly effortlessly, at the end of a long day.

How has the weather been in your area lately? Cold? Snowy? If so, I bet you've been thinking a lot about soup, chili and other warming winter dinners.

I know I have.

But no wussy soups for me this time of year. Nosirreebob. The Ninj craves a hearty, filling soup, with protein and veggies, that makes a whole meal in and of itself.

(Largely this is because I'm lazy and don't want to have to make a salad to go with my soup, but let's just keep that between us, mmmmkay?)

Speaking of lazy, I'm a huge fan of soups made in the slow cooker because ... well, I just said it ... I'm lazy and the crockpot is the lazy cook's best friend. Hey, using the slow cooker is pretty much the only way I get out of cooking every once in a while. (Back when we first got married, I tried assigning Mr. Ninj a cooking night once a week to give me a break -- he missed the point about "cooking" and just ordered Chinese every week, so I gave up.)

I love steel cut oats. While regular rolled oats are a staple in my pantry for recipes like baked oatmeal and peanut butter banana oatmeal muffins, I prefer the heartier and chewier steel cut oats, with their slightly nutty flavor, for my hot cereal breakfasts. But steel cut oats can take extra time to cook than quick oats -- and, if you're like me, you don't have a lot of extra time when you're trying to get up and out the door in the morning.

So when Quaker asked me to develop a recipe using steel cut oats to inspire you to consider oatmeal in a whole new way for 2015, I jumped at the chance and created this chai spiced slow cooker steel cut oat hot cereal. By using your slow cooker while you sleep, you can start enjoying a better-for-you breakfast of steel cut oats easily and without any extra effort -- in fact, with almost no effort at all.

The beauty of this whole grain oat breakfast recipe is that it is so easy. Firstly, there are only four ingredients and all of them are readily available at your local Target (as if you need an excuse to shop at Target, right?). Secondly, the recipe is super easy to prep and to cook, as it cooks itself in the slow cooker while you sleep! And thirdly, having a better-for-you whole-grain breakfast waiting for you when you get up is a real morning time-saver. No more excuses for not eating healthier breakfasts in 2015!

Based on my Pinterest feed, you'd think that no one eats anything other than cookies, pecan pie and party appetizers during the entire month of December.

While cookie exchanges, office potlucks and party dessert tables are all awesome, let's not forget that there are still a whole bunch of dinners that need to be made and eaten this month.

Now, that doesn't mean those dinners have to be elaborate or complicated -- let's save elaborate and complicated for the buche de Noel and gingerbread houses. With everything you've got going on, you need at least one thing to be simple.

And what's simpler than a slow cooker dinner? Pretty much nothing, my friend.

Regular readers know that, as much as I love CSA produce, I'm just a wee bit of a meatasaurus. Case in point, this chicken and sweet potato curry. I adapted it from a vegetarian Bon Appetit recipe, touted for its ability to please everyone, no matter what their food issues.

Well, oops -- I just screwed the vegetarians and the vegans by adding chicken. But unless you're a vegetarian or a vegan, you will thank me.

Peeps, I am so excited about today's post -- inordinately so, but hey, sometimes it's the little things that make my day.

Why am I so excited? Because I had an aha moment that turned out to be super sweet. Literally.

I had a bunch of apples from my fall apple haul leftover and decided to make my favorite, no-effort slow cooker applesauce.  But I also happened to have a couple of sweet potatoes. And you know how apples get sweeter when you cook them into mush? SO DO SWEET POTATOES.

At that moment, this sweet potato applesauce was born.

And it couldn't be easier to make: two ingredients, one crockpot, zero effort. Well, nearly zero -- you do have to peel the potatoes and peel and core the apples. But after that? Just load up the crockpot and watch the magic happen.

When the weather starts turning chillier, I love to make soup -- especially in my slow cooker. Oh heck, let's be honest: I love to make anything and everything in my slow cooker because, frankly, I'm pretty lazy.

Yes, I am! Obviously, I love to cook or we wouldn't be chatting like this every week. But getting a homemade dinner on the table every night is sometimes just a royal pain in the ass, even for a food blogger. And that, my friends, is why I love, nay worship my slow cooker -- so much so that I now own two of them.

Back to the soup. While a hot bowl of soup is always warming and welcome for dinner, occasionally it's just not hearty enough to stand alone as a full meal for me. So if you don't want to have to also whip up some grilled cheese or a salad to accompany your soup, take my advice: Turn it into stew.

Oh look: It's still September so The Ninj is still not talking about pumpkin.

Well, at least until next week.

You know I'm devoted to seasonality and September is the best month for apples: crisp, tart, crunchy, sweet ... GGGAAAAHHHH! I love apples! Even writing about them gets me excited to make something from apples.

So I made individual apple bread pudding cups in Mason jars in my slow cooker. Squeeeeeeeeeeeeeeeee!  But before we talk about the recipe, you have to hear the backstory on this one first. 

A friend of mine wanted to make my slow cooker bread pudding for a dinner party but was having a hard time finding a heat-safe loaf pan that would fit in her crockpot (mine is oval-shaped, so it's not an issue for me). That's when it occurred to me that I could put my crazy-hoarder-lady supply of canning jars to good use and make individual bread pudding cups.

OMG. Too stinkin' adorbs. I was practically peeing myself with excitement.
