This no-cook raw vegetable salad is the perfect meal salad for hot summer nights or crowd-pleasing side at your next summer BBQ.
You know The Ninj is all about healthy, real-food recipes that are easy to make, right? So what could be healthier and easier than a raw vegetable salad?
Pretty much nothing, peeps. No cooking. Just chopping. Good eating.
I've adapted this raw vegetable salad recipe from one by London chef Yotam Ottolenghi (he of the gorgeous Plenty cookbook fame), so you know it's bound to be super fresh and healthy, loaded with good-for-you veggies readily available at your local grocery or -- better yet -- farmers market.
Plus, it's packed with grated cauliflower. Yes, grated, which it turns out in awesome way to overcome Mr. Ninj's texture aversion to cauliflower (and dupe him initially into thinking it was grated cheese!).
Now, being The Meatasaurus, I chose to add some grilled chicken to this salad -- which probably makes the vegetarian Chef Ottolenghi cringe, but that's how I roll. It's completely optional if you prefer the meatless route or want to use this salad as a side rather than a main dish salad. Chicken or not, you're going to dig the light but tangy vinaigrette plus how super-fast it is to whip up this salad.

Normally this blog is all about me, right? Sure, I'm sharing it with you, but the recipes are all mine and the stories generally only involve me and Mr. Ninj.

I wanted to take a moment to thank you for supporting The Ninj and this blog. Every time you view one of my recipes or leave a comment or check out the books I've read (yeah, I need to update it with my 2014 list, don't I?), you make this blog successful.
And, given that I gave up my "real" job five years ago to focus on this hobby-turned-lifestyle, that means the world to me.
So I thank you.

Chocolate and goat cheese pastries {+ a giveaway}
Enjoy these easy yet elegant pastries, filled with dark chocolate and creamy goat cheese, for breakfast, at tea time or as a light dessert.
We regularly -- and without question -- pair cheese with wine, right? Similarly, we know how good a glass of red wine and some dark chocolate can taste.
So why is it that we don't often think of pairing cheese and chocolate together?
Clearly we've been missing the boat. In a big way.
In honor of Valentine's Day (which, frankly, is not a big deal around Casa de Ninj) and, perhaps more importantly, the end of Detox January (which I vow will not simply become Retox February), I've created a little treat -- dark chocolate and goat cheese pastries -- that you can enjoy for breakfast, with afternoon tea or as a light dessert.
Or, if you're Mr. Ninj, all three.
Regular readers know I'm a big fan of sweet and savory combinations, like my salted cardamom oatmeal cookies or the holiday favorite bourbon-salted peanut butter chocolate truffles. So when my friends at Vermont Creamery and Lake Champlain Chocolates suggested pairing chocolate and cheese for Valentine's Day, my interest was a little more than piqued.
At first I was a little stumped as to how best to mix the creamy, savory goat cheese with the richer, sweeter chocolate -- other than just snarfing them down separately, of course. I tried to think classier. Which made me realize that both since both cheese and chocolate get melty and even more awesome when warm, why not tuck all that awesomeness inside a pastry?
Booyah.
As with many of my recipes, this one is easy peasy, even though it makes quite an elegant impression. The pastry puffs up like you wouldn't believe, and while the goat cheese and rich chocolate does indeed, as I had hoped, get all melty and awesome in the center, there's not so much of it as to overwhelm the whole pastry effect. It's very less-is-more.

Pumpkin maple smoothie {$100 gift card giveaway}
This healthy pumpkin maple smoothie, made with silken tofu, is gluten-free, dairy-free and refined sugar-free. A creamy, delicious, on-the-go fall-flavored breakfast or afternoon treat.
You'd have to be living under a very, very large rock not to have encountered some kind of Pumpkin Spice Whatevs this fall. While this craze may seem -- well -- more than a little cray cray, there's a reason why we all tend to get so worked up about pumpkin in October -- other than Halloween and jack-o-lanterns, of course. One whiff of pumpkin and cinnamon and nutmeg together can conjure up all sorts of memories of cool weather, falling leaves, cozy sweaters and crackling fires.
Which is probably why pumpkin spice is such a coffee house favorite -- you need a comforting beverage to keep you warm as you site by the crackling fire in the cool weather in your cozy sweater, watching the leaves fall.
But since I'm no longer a coffee drinker, I wanted to come up with a way that I, too, could enjoy Pumpkin Spice Whatevs this fall, without falling too far off the healthy food bandwagon.
As luck would have it, I got the opportunity recently to try some Mori-Nu Silken Tofu, which inspired me to focus my pumpkin spice attention on smoothies.
Now, before you freak out that I added tofu to my smoothie, let me explain. Mori-Nu is different because it's silken tofu, which has a very smooth and custard-like texture, so it adds a great creamy texture to smoothies (with no bananas required!). And it never needs to be pressed or drained, so you can use it as-is, straight out of the box -- you know The Ninj is all about speed and simplicity in recipes.

Mason Jar Salads and More book giveaway
During the busy back-to-school time, don't forget to pack yourself a healthy lunch. Julia Mirabella's new book about grab-and-go layered lunches in Mason jars can help -- and you can win a copy.
Unless you've been living under a very large rock on the South Pole, you know it's back-to-school time.
And you don't know that simply because the calendar page flipped to September: You know it because it's being crammed down your throat everywhere you look, whether you have school-aged children or not. Major retailers have been working hard since practically July to sell you oodles of backpacks, lunch bags, plaid skirts and Number 2 pencils.
(Is there even such a thing as a Number 1 pencil? I imagine it being all uppity, like "I'm Number 1! I'm Number 1!" What a prick.)
And yes, I realize I'm dating myself with the calendar page and pencil references. Should have been an iPad reference, I guess. Whatevs: I'm still pretty analog.
Food bloggers are also guilty of riding on the coattails of the back-to-school fever. Packable snacks, cutesy lunchbox options and "kid food" boards are popping up all over Pinterest.
(Don't get me started on "kid food." Really, if I get started, I'll get all ranty and won't be able to stop.)
But while we're all focused on getting the wee ones back to school with the right supplies and a good lunch, we may have forgotten about ourselves. At least in the lunch department.
Bringing your lunch to work is a great way to reduce your dependency on fast food, processed food or other less-than-healthy food options -- and you know that helping you do that is pretty much The Ninj's raison d'etre. So put down that nasty-ass frozen Lean Cuisine because The Ninj wants to talk about a better, healthier lunch option that is still yummy and portable: Mason jar salads.

Savory sausage bread pudding muffins
Savory sausage bread pudding muffins: a fun riff on the traditional breakfast casserole, perfect for feeding a brunch crowd.
I love it when the stars seem to align -- that is, when my real life dovetails perfectly with my blogging life. How so? Katie of Healthy Seasonal Recipes asked me to take part in her spring entertaining giveaway on the very same day that my BFF sent me a recipe for a savory bread pudding that she thought I would like.
Booyah.
Spring entertaining made me think immediately of Easter brunch and, I swear, there is nothing better (or easier) for feeding a brunch crowd than a breakfast casserole. And it seemed to me that this savory bread pudding was just begging to be made into cute single-serving muffins.
(So, should we be even cuter? Should bread pudding muffins henceforth be known as "puffins"? No, I don't think so either.)
Therefore, you can see why I called it an alignment of the stars.
In my quest to make my recipes more stealthily healthy, I cut way back on the whole-fat dairy in this bread pudding -- and you won't miss it: it's still rich and filling with lots of cheesy flavor. For a vegetarian version, simply omit the sausage and double up on the amount of bell pepper (a combination of red and green looks smashing).

Banana espresso breakfast muffins (+ a giveaway)
Banana espresso breakfast muffins: a healthy, easy recipe reminiscent of banana bread but with a shot of espresso for a delicious morning pick-me-up.
You know what's better (and a wee bit healthier) than coffee for breakfast? Coffee in your breakfast. In the form of banana espresso breakfast muffins.
Yeah, I'd call that stealthy. Here's how they happened:
I was excited when Staples asked me if I'd like to try out the Verismo home brewer from Starbucks. One of the biggest pluses is that the brewer comes with a recipe booklet for making many of your favorite Starbucks drinks at home. I mean, how cool is it to just whip up a chai latte or an iced Americano or a caramel latte whenever you want?
It's very cool. And handy.
And easy to use: just pop a coffee pod into the sleek brewer and press a button. There are also milk pods (made of real milk, not "creamer" chemicals) for making the specialty drinks, so there's no separate heating or frothing necessary. And the used pods are collected in a little built-in container which makes clean-up a snap.

Coconut chocolate drops (and a Keurig giveaway)
Today is an exciting day in Ninjaland: to celebrate the first day of spring and, hopefully, the beginning of the end of all this winter snow and cold weather, I'm part of a group of awesome New England bloggers introducing you to a new seasonal coffee flavor from Keurig Green Mountain ... AND giving away a Keurig brewer!
The new coffee flavor, Island Coconut, truly lives up to its name. It's a light-roast coffee (which I prefer) with a great coconutty aroma -- it will definitely have you thinking about tropical islands and warm weather.
It also had me thinking about pairing it with chocolate, which I have done with this recipe for Coconut Chocolate Drops, a ridiculously easy, no-bake dessert. Made with very little sugar, ground oats, unsweetened coconut and cofee, these bite-sized chocolate drops are only slightly sweet and guilt-free.

ERMERGAHD. This stuff is like candy -- well, if the candy was coffee-mocha-marsala-flavored. Just as with the traditional tiramisu dessert, the key to this recipe is rich mascarpone cheese, which I love because it's not too sweet. Add to that a great mocha-espresso flavor, accented with sweet marsala wine and you've got all the awesomesauce of tiramisu without any of the hard work.

Pumpkin ginger cupcakes (gluten-free or not) -- and a giveaway
These delicious pumpkin ginger cupcakes with mascarpone frosting can be made gluten-free or not.
Yes, I know it's November and therefore the all-pumpkin-all-the-time blogger recipe pumpkinpalooza should now be over, right?
Wrong.
As I have mentioned before, The Ninj respects seasonality. To wit, I held off this year on pumpkin-izing the blog until October, to give props to apples and pears in September.
And guess what? Pumpkins are still in season, even though Halloween is over and it is November! I mean, hello? Ever heard of pumpkin pie for Thanksgiving dessert?
But I'm here to do you one seasonal dessert better, since regular readers know I'm not a fan of pie: pumpkin ginger cupcakes with a creamy mascarpone-cream cheese frosting. Now THIS is a Thanksgiving dessert that I can get behind.
And did I mention these cupcakes are gluten-free? OR NOT!!? And that either way they are moist, not cloyingly sweet and perhaps the most perfect dessert EVAH?

Garden protection tips and Nite Guard giveaway winner
Thanks to everyone who entered last week's Nite Guard Solar garden protection giveaway. The lucky winner (picked by number generator via random.org) was Katherine C., who is hoping the units will help her in her fight against deer. Keep us posted, Katherine!

I'm feeling rather fortunate (sort of) that I only have to contend with deer and bunnies, as well as the ocasional bear passing through. My readers apparently also have to deal with squirrels, chipmunks, cats, possums, raccoons and rats (UGH)!
In addition to announcing the winner, I decided also to include a roundup of all the other critter prevention suggestions that came in via the comments, as well as some others I've heard bandied about.
- Raised beds (too high for bunnies!)
- Marigolds (and fragrant herbs except basil) planted around the border
- Dogs (but only some!)
- Liquid Fence (US) / Bobbex (Canada)
- Human hair
- Coyote (or other predator) urine
- Red pepper spray
- Netting (for tender greens)
- Castor oil (for burrowing voles)
- FENCES!
Lastly, the most effective "weapon" we have ever used to keep the deer from our garden was water. Well, water in the form of motion-activated fan sprinklers. (The only reason I don't use them now is that we don't have a water source close enough to the garden; if you do have water nearby, these sprinklers are THE BEST!)
Not only did it startle the deer away when they got too close, but it also provided us with endless amusement as we watched unsuspecting early morning joggers passing by our garden. :-)

Protecting your garden: a Nite Guard Solar giveaway

Regular readers are used to hearing about my ongoing battle with the deer and the bunnies in our garden and wee orchard (they like fruit and veg as much as much as we do, apparently). Since both the garden and the orchard are situated in the front of our house, I'm loathe to put up unsightly fencing around them, so I'm always on the lookout for non-fence alternatives to keeping the critters away from our plants.
Two years ago, I decided to try the Nite Guard Solar "predator control system" (doesn't that sound badass??!!!). If you're not familiar with this product, it's a solar-powered unit, pictured above, that automatically delivers a single flash of red light each second from dusk to dawn. Nocturnal animals think it is a blinking eye (from up to 500 yards away), a potential threat to be avoided. It also has the added benefit of being mistaken for some kind of security camera on your property, thus discouraging potential human trespassers.
One great feature is that Nite Guard Solar is effective against animals of various sizes: bunnies, raccoons, coyotes, deer -- even hawks and owls. The key is to position the units at the eye-level of the animal you are trying to deter. For example, since bunnies and deer are our biggest concern, I have my units positioned at two different heights.
Weatherproof and solar-powered, the units require no attention from us other than repositioning. You see, even the silliest deer will stop believing that the flashing light is a threat if it never changes position. So every two weeks or so, I move the lights to a slightly different location (I mount them with zip ties, so they're easy to remove and reposition).
And they have worked -- with no fencing required.

You see, even the silliest deer will stop believing that the flashing light is a threat if it never changes position. So every two weeks or so, I move the lights to a slightly different location (I mount them with zip ties, so they're easy to remove and reposition).
And they have worked -- with no fencing required.

- One comment will be chosen at random (using random.org) as the winner.
- The winner will be notified via the email address provided when the comment is left (so be sure yours is accurate) and also posted on the blog after confirmation.
- The winner will need to respond and supply me with a mailing address within 48 hours of notification, which will then be shared with Nite Guard LLC.
