Made with no dairy or refined sugar, these banana chai muffins are a healthy choice for breakfast or an afternoon snack.
I am lucky enough not to have many dietary restrictions in my life -- other than those that are self-imposed, of course (e.g., I gave up all fast food more than six years ago). But I appreciate that not all my readers are as lucky, so I try, whenever I can, to feature recipes that address some of your dietary concerns.
One of the concerns that comes up all the time is dairy -- and how to eat well without it, if you need to. Whether it's because of lactose intolerance or concern about dietary cholesterol and intake of fats, dairy isn't for everyone (although it would break my heart into pieces not to be able to eat my beloved cheese). Therefore, I'm happy to help by creating delicious dairy-free recipes for my readers, especially during February, which is American Heart Month. But that can prove challenging when it comes to baked goods.
Why? One word: Butter. Which begs one question: Is there really a butter substitute out ther that's good for baking? I say yes!
To help you figure out the best way to bake dairy-free, I created this recipe for healthy banana chai muffins and made it multiple times, not with butter but with two different spreads instead -- SmartBalance Buttery Spread and I Can't Believe It's Not Butter! -- to see which one I liked best.

Blueberry quinoa protein smoothie
Skinny blueberry and banana quinoa protein smoothie: made with soymilk, it's dairy-free, gluten-free and refined sugar-free.
I never get tired of smoothies. How about you?
I swear there are an infinite number of good-for-you ingredients that can be combined to make smoothies so that you rarely need to drink the same flavor twice. Which is great, because I love drinking them both for breakfast or as an afternoon "snack", and usually what my taste buds are craving are pretty different at those two different times of the day.
This blueberry quinoa quinoa smoothie fits the bill for either time of day, as it's super-simple to make, with only five ingredients. Also, it's easy to create new flavor variations simply by changing up the kind of frozen fruit you use in this smoothie recipe. I've swapped out the blueberries for peaches, mangoes, strawberries, grapes -- you name it, I've tried it.
In addition to tasting great, this skinny smoothie is also loaded with energy-boosting protein. I work in all that good protein by first substituting Silk soymilk -- with 8 grams of plant-based protein per serving and no cholesterol -- for dairy milk. I like to use organic unsweetened Silk soymilk, but be sure to check out the full offering of Silk soy products. Then I also add cooked quinoa, much the same way that I like to use old-fashioned oats in my favorite breakfast smoothie.
Plus, this smoothie is dairy-free, refined sugar-free and gluten-free, making it a great no-guilt, good-for-you snack in that long stretch after lunch but before dinner. Just say no to sugary snacks and say yes to this blueberry banana quinoa protein smoothie instead!

Green power smoothie (to share with your dog!)
Love your dogs? Then share this kale, spinach, peanut butter and banana green power smoothie with them for breakfast.
Yesssssss! I'm so excited to share this smoothie post with you because I assume that you, like me, are a crazy dog person. In a good way. Meaning you love dogs. So much so that you may have been known to cook for them.
Chicken jerky, sweet potato chips, doggie meatloaf -- all part of my cook-for-dogs-repertoire. But now I've got a doggie breakfast specialty as well, to round out Smoothie Week: a kale and spinach peanut butter smoothie that is not only for them, it's also for you!
This easy-to-make smoothie is loaded with healthy ingredients that are good for you but also good (and perfectly safe) for your favorite poochie. And the slightly larger portion size accommodates you both: pour a little bit (start with 1/4 cup for a medium-sized dog) into a bowl for your pal and save the rest for yourself.

Oatmeal breakfast smoothie

Earlier this week, I got you prepped with all my best tips and tricks. Did you make some nut milk? And then turn it into ice? Freeze some bananas? Great: You're all set to whip up one of the yummiest, healthiest smoothies around.
If you're like me, breakfast can get to be a little boring after a while. It's tough to keep it creative every single morning, isn't it? And as much as I love love LOVE my morning oatmeal (especially when it cooks overnight in the slow cooker), I need to change things up so I don't get into a rut and grow weary of my faves.
Which is why I love that this oatmeal breakfast smoothie. It's basically my favorite morning oatmeal -- complete with a whole heap of good-for-you fruits, some natural protein and no refined sugar -- in a delicious, drinkable form.
Perhaps the best thing about this oatmeal breakfast smoothie is that it is incredibly filling. When I have one for breakfast, I never get the eleven o'clock munchies; it keeps me full and energized until it's time for lunch.

Banana espresso breakfast muffins (+ a giveaway)
Banana espresso breakfast muffins: a healthy, easy recipe reminiscent of banana bread but with a shot of espresso for a delicious morning pick-me-up.
You know what's better (and a wee bit healthier) than coffee for breakfast? Coffee in your breakfast. In the form of banana espresso breakfast muffins.
Yeah, I'd call that stealthy. Here's how they happened:
I was excited when Staples asked me if I'd like to try out the Verismo home brewer from Starbucks. One of the biggest pluses is that the brewer comes with a recipe booklet for making many of your favorite Starbucks drinks at home. I mean, how cool is it to just whip up a chai latte or an iced Americano or a caramel latte whenever you want?
It's very cool. And handy.
And easy to use: just pop a coffee pod into the sleek brewer and press a button. There are also milk pods (made of real milk, not "creamer" chemicals) for making the specialty drinks, so there's no separate heating or frothing necessary. And the used pods are collected in a little built-in container which makes clean-up a snap.

Peanut butter and banana snack cake
Super-easy peanut butter and banana snack cake is perfect for snacking or a quick breakfast.
We're into Week 2 of Detox January 2014 and I'm giving you a recipe for peanut butter and banana snack cake.
Only with The Ninj do the words "cake" and "detox" manage to go well together.
(See? I told you this would be easy!)
Since I'm still on my post-oral-surgery soft food kick, I've been trying to come up with ever-more inventive ways with bananas, as they are filling and a good source of protein. I've been making a version of this snack cake (peanut butter only) for a few years now and realized that, if I took small bites and mixed in some mashed banana, it would definitely be post-surgery worthy -- especially since I have graduated from drinking my meals to chewing them again.
The banana was the perfect addition, lending a bit more moistness and really highlighting the creamy peanut butter flavor. It's a new breakfast favorite around Casa de Ninj.
This cake is also very kid-friendly and would be a nice lunchbox or after-school treat. And, as with all my favorite recipes, feel free to personalize it; for example, throw in a handful of chopped nuts, if you want to add a little crunchiness, or add a sprinkling of crushed peanuts to the top before baking.

Detox January 2014: dairy-free green smoothie

Welcome to Detox January.
For new readers, let me explain so you stop freaking out. This is The Ninj's version of "detox", so you know it's not some scary-ass juice cleanse or eat-only-two-crackers-per-day diet plan.
(Please: I like to eat way too much for that crap.)
Mr. Ninj and I do Detox January every year as a way of starting the new year off right, after all the excesses of the ho-ho-holidays. And, frankly, because I'd rather eat a muffin top than have one around my waist.
Detox January is not some overly ambitious resolution that you know you won't be able to keep (new gym membership, anyone?) Instead, it's more of a short-term, mini resolution that you know you can achieve.
The rules are simple. For the entire month of January,
And that's it. Simple, right?
You can do this -- and you'll be impressed at how quickly you will drop the holiday poundage and how much more inspired you'll be to eat better in 2014.
This year, I'm starting you off in Detox January with a nice healthy smoothie -- mainly because I personally am starting Detox January with oral surgery that will require me to drink my meals for a couple of days. (Yeah, lucky me.)
But I don't mind because I've got this awesome green smoothie -- even though it's dairy-free and made up entirely of fruits and veggies, you won't believe how YUMMY it is. (Remember: ninjas do not lie.) Not to mention that you can get three to four servings of fruits and veggies just by drinking one of these bad boys for breakfast! And I can guarantee that it will appeal to even a fussy eater: Mr. Ninj hates pretty much all green vegetables yet he loves this smoothie.
Why? Because you barely taste the spinach! Seriously. All you taste is the fruit.

- Eat a bit healthier every day (I don't expect you to get crazy here -- we just try to eat more veggies than cookies and keep our recipes more Cooking Light than Julia Child)
- Exercise more than you did in December
And that's it. Simple, right?

Banana-zucchini muffins
So, have you used up all your zucchini yet? (Snort)
Yeah, I know: bad joke. Mine is still coming in from the garden and I don't know how many more baggies of shredded zucchini my freezer can hold. I still have one in there from last year, for cripes sake.
But if you also happen to have a past-its-eating-prime banana hanging around, today is your lucky day.
If not for the pathetic banana on the counter, I would likely have made my summer harvest zucchini bread this week. But frugality (read: cheapness) got the better of me: I was determined to use up the banana and the zucchini -- and not by throwing either one into the compost bin. My challenge to myself was to find a way to use them both in one recipe.
Lucky for you, I scored. And scored big.
You know how yummy banana bread is? And you know how much you love zucchini bread? Yeah? Well, now combine them together, add some flax seed meal to make it good for you and -- voila! -- you've got The Ninj's favorite new breakfast: banana-zucchini muffins.
The best thing about these banana-zucchini muffins is that they are incredibly moist, without any added oil -- and not that rubbery, oh-you-clearly-added-applesauce-instead-of-oil-to-make-it-healthy moistness. We enjoy them au naturel (which makes them handily portable), but they are also wicked with a little butter or fruit butter schmeared on them.
And they freeze well, too.

Nutella banana bread
Since I made my own Nutella, I've been looking for new, creative ways to use it -- other than eating it straight from the jar with a new, creative spoon each time.
That, coupled with having three past-their-prime bananas on the kitchen counter, gave rise to this bread.
(And why do overripe bananas always seem to hang out in recipe-perfect groups of three?)
Regular readers know I like my sweet stuff a little on the less sweet side (I'm more of a savory gal, frankly), which is why I'm happy happy HAPPY about this bread. It's a great afternoon snack and, if you don't mind a little chocolate in the morning (Mind? Who am I kidding...), it's a lovely breakfast bread.
Especially toasted and topped with a little schmear of strawberry jam. Yowza.

Peanut butter banana oatmeal muffins (from your best girlfriend)
Clearly, I can't get over my breakfast obsession.
But before I even get to these yummy, Elvis-y muffins, I have to tell you about my weekend.
We had houseguests, which gave me a great opportunity to trot out some of my favorite recipes from this blog, some not often sampled by anyone other than Mr. Ninj and me:
- Baked oatmeal
- Crockpot oatmeal
- Pancake muffins
- Nicoise toasts
- Scourtins
- Avocado pasta salad
- Chocolate strawberry quick bread
While planning the weekend menu, it finally dawned on me what a great variety of recipes I have collected and tested. And they are all in one place, online, easily accessible in my kitchen without searching through folders full of scraps of paper.
In a nutshell, I'm using my own blog as a database.
I've been fretting for a while that my blog is not useful because it's not niche-y enough -- that is, it's not easy to label, elevator-pitch style. Some blogs are easy to label, as they focus solely on vegetarian recipes, vegan recipes, desserts, Indian food, gardening, canning, DIY crafts, knitting, "skinny" recipes, toddler-friendly food, Southern food ... you name the niche, there's a blog out there filling it.
It can make the generalist feel a little ... well ... too general. (Akin to my engineer husband not understanding why anyone, ahem, would choose a liberal arts education over a more specialized one.)
But my experience this weekend helped me to realize that it's OK to be a generalist because I'm filling my own niche, both for me and for you, my readers: the what's-for-dinner (or breakfast or lunch) niche, punctuated by the occasional foray into the world of DIY (gardening, pantry staples, crafts).

I mean, everyone else is.
Which is exactly why I'm posting about cookies instead.
Now, don't misinterpret my meaning. I love Thanksgiving; it's my ultimate favorite holiday. Any day that is all about eating good food, spending time with people you love and being grateful for all the crap you already have, rather than just running out to buy more crap that no one needs, is a perfect day in my book.
(True story: when we tried to eliminate the adult gift-giving on my side of the family a few years ago, my dad threw a hissy fit because, as he put it, "Christmas is all about gifts: just look at the wise men!" Sigh.)
But I swear, if I see one more picture of turkey or sweet potatoes in my news feed, I may scream.
So today I share with you a very unholiday-ish cookie recipe.

My assigned blog this month -- The Mommy Bowl -- is a great example of that.
You see, Deanna of The Mommy Bowl cooks a whole lot of gluten-free, dairy-free and often vegan dishes.
(Yes, if you know The Ninj, you are laughing hysterically at this point, because you know I like to throw bacon and cheese into nearly everything and have more than once referred to myself as The Meatasaurus.)
But come, come, I am nothing if not flexible. And I do like to try new things.

Detox January, Week 3: Chocolate Chip Banana Bombs

I found the recipe for these cake-like cookies via an iPhone app called Big Oven. (Mr. Ninj heard about it on NPR and suggested I check it out.) It's an online cooking community and repository of user-submitted recipes. One of its coolest features is called "Use Up Leftovers" -- you can enter up to three ingredients and it will suggest recipes using those ingredients.
This week I had a few bananas beginning to turn scary-brown. I thought about banana bread, but that just wasn't doing it for me. So I typed "bananas" into the Big Oven app.
I got many results for banana bread: Easy, Quick, Crazy-Healthy, Best-Ever, Dad's, Not Yo Momma's and more.
Then I came across Da Bombs.

Detox January, Week 2: Nutella-banana popsicles

Nutella-banana popsicles.
Yes, for our Detox January.
Because each pop is only about 145 calories and 5 grams of fat (based on my getting 14 pops out of the recipe).
And they are loaded with fruit, which we all know is good for you and very Detoxy.
It's partially a size thing but also an ingredient thing; that is, the size is smallish and the ingredients are just two: yep, Nutella and bananas.
Making these pops really couldn't be easier. In fact, I'm not even going to both to write out a "recipe" because it's ludicrously simple.

Banana cake for the Ninj's first birthday: a recipe

Yep, one year and 110 posts later, here we are. And of course we have to celebrate a milestone birthday with cake.
Yay ... CAKE!
Until it turns out to be bread in cake's clothing.
I got this recipe from sasasunakku (love her site and her understanding of hangrrr!) and was really excited: banana CAKE! Apparently an old-school New Zealand favorite! How international the Ninj's first birthday would be!
So I made said cake. And it looked beautiful, thanks to the flowery kugelhupf pan (look at it up there -- wicked!). I even broke out my rarely-if-ever-used snazzy cake stand for the photo shoot. Nice.
